Ingredients needed for homemade healthy granola bars
You will need the below ingredients to make these homemade granola bars.
- oats: Oats are one of the main ingredients in these power bars. Oats are a great source of whole grains and add fiber to these bars.
- almonds: Almonds are one of my favorite nuts to use while baking. For this recipe we will use 1 cup!
- hemp hearts: Hemp hearts add a nutty and crunchy taste to these bars. If you don’t want to use hemp seeds, feel free to substitute in equal parts almonds (or any other seed).
- chia seeds, pumpkin seeds and sunflower seeds: All these seeds are rich in nutrients! They add crunchiness and flavor. Feel free to use and substitute any nuts you’d like.
- peanut butter: I love using peanut butter in this recipe. Feel free to use your favorite nut butter.
- maple syrup: Maple syrup adds the perfect amount of sweetness. Feel free to use honey if you prefer.
- coconut oil: Coconut oil helps hold these bars together. For this recipe, I used refined coconut oil so they don’t have a strong coconut taste or smell.
- salt: Salt gives these bars a ‘sweet and salty’ flavor!
- vanilla: Vanilla helps enhance the flavor in these bars.
- chocolate: chocolate is a must! The chocolate drizzle adds the perfect touch to these bars.
How to make these homemade granola bars
Firstly, line an 8×8 pan with parchment paper. Leave parchment paper hanging over the side. This will make it super easy to remove the bars from the pan when they are done.
Add the dry ingredients to a large bowl. Add the oats, almonds, hemp hearts, chia seeds, pumpkin seeds, and sunflower seeds to a high speed blender. Pulse the mixture a few times to give the nuts and oats a light chop. Pour into a large bowl.
Now grab the wet ingredients. In a small pot over medium/low heat, add the peanut butter, maple syrup, coconut oil, vanilla and salt. Mix for about 2 minutes until melted, smooth, and combined.
Combine. Pour the wet peanut butter mixture over the dry oat mixture. Mix until combined and press the mixture into your prepared 8×8 pan in an even layer.
Freeze or refrigerate. Place your pan in the freezer for at least 2 hours. I like to leave mine in the fridge or freezer over night!
Make the chocolate drizzle. Melt the chocolate chips and coconut oil in the microwave.
Enjoy! Finally, once the bars have chilled, remove them from the pan using the parchment paper. Slice into 12 bars and drizzle with chocolate.
How to store these homemade healthy granola bars
You can store these homemade healthy granola bars in your fridge for up to a week or keep them in the in the freezer for up to a month.
If you keep them in the freezer, simply let them sit out at room temperature for a couple of minutes. I like storing and eating my bars straight from the freezer.
