Ingredients in easy sausage breakfast casserole
Let’s take a minute to break down the ingredients in this yummy breakfast. Here are the ingredients we are working with:
- Red bell pepper, red onion, scallions, mushrooms, and spinach are the veggies we are using in this recipe. I have included some other veggie substitutes down below!
- Lean ground sausage, or chicken sausage is the main protein source we are working with. However, you can use any lean meat you prefer.
- Mozzarella cheese for cheesy goodness. Mozzarella pairs really well with all the ingredients in this recipe. But, you can honestly use any cheese you love (cheddar is another great option!)
- Another obvious protein source: eggs! This recipe calls for ten eggs.
- Milk adds moisture and texture.
- Here are the seasoning we are working with: garlic powder, salt, and pepper. They help enhance all the flavors so don’t forget to add them in!
- Lastly, shredded potatoes. One of the best additions in my opinion. Added potatoes helps ‘bulk up’ this casserole and they make it super filling for those long mornings.

How to make this breakfast casserole recipe
I have outlined how to make this breakfast casserole recipe down below. It just requires 5 simple steps!
STEP ONE
Preheat your oven to 350 degrees and grease a large casserole dish with cooking spray and oil.
STEP TWO
Add 1 tbsp olive oil to a pan. Add the bell pepper, onion, scallions and mushrooms. Sauté for 5-7 minutes until almost cooked. Add the mixture to the bottom of the casserole dish.
STEP THREE
Now add in the ground sausage to the pan (If your sausage is not seasoned add 1 tsp fennel seed, 1 tsp garlic powder, 1/2 tsp dried sage, 1/2 tsp salt and pepper.) Or you can add even if it is seasoned. Cook until browned and cooked through, stir in the spinach and cook 1 more minute. Now add to the bottom of a greased dish along with the veggies.
STEP FOUR
In a large bowl whisk the eggs, milk, cheese and seasonings. Then add in the shredded potatoes. Whisk until combined. Pour the egg mixture over veggies and browned sausage. Give the mixture a light stir to combine everything together.
STEP FIVE
Bake at 350 for 40-45 minutes or until the center is set and cooked through.
Variations
Here are a few easy variations for this recipe.
Veggies. This recipe calls for a mixture of veggies. But what’s great is that they are so versatile and customizable. Feel free to use zucchini, yellow peppers, broccoli, kale or asparagus!
Cheese. This recipe calls for shredded mozzarella cheese. However, you can use any cheese you prefer. Cheddar cheese, pepper jack, or feta are all great options.
Ground sausage. This recipe calls for one pound of lean ground sausage but, you can use ground turkey, ground beef or ground pork. You can honestly use whatever protein source you love. However, I recommend adding some seasoning (recommendation in recipe) if the meat isn’t already seasoned.

Ingredients
- 1 red bell pepper finely diced

- 1 bunch scallions chopped and green ends removed
- 8 oz mushrooms finely chopped
- 1 pound lean ground sausage or chicken sausage or turkey seasoned with fennel, sage, salt and pepper, garlic powder.
