Gluten free apple cinnamon rolls
Let me start out by saying that these gluten free apple cinnamon rolls are not like your traditional fluffy cinnamon rolls (if you’re looking for a classic, fluffy cinnamon roll give these soft and fluffy cinnamon rolls a try). Since this recipe is made with oat flour, they have a completely different texture. They are still loaded with sweetness, cinnamon and apple flavor but, they are a different in many ways as well. These rolls have a cake like texture but are still soft and melt in your mouth. Keep reading to find out more details on these cinnamon rolls with apple pie filling.
Ingredients in apple cinnamon rolls
DRY INGREDIENTS
- Finley ground oat flour is the main flour we are working with. Make sure to use a nice, finely ground oat flour to ensure the textures of these rolls comes out nicely!
- Coconut sugar to sweeten things up. You can also use brown sugar.
- Baking powder to help puff up these rolls.
- And cinnamon of course! Cinnamon is a must for apple cinnamon rolls.
WET INGREDIENTS
- Milk adds moisture. You can use milk or almond milk.m
- A splash of lemon juice will combine with the milk to create homemade buttermilk.
- Vanilla extract to enhance the flavors or these rolls.
- And the last of the wet ingredients is ghee or butter. Feel free to use whichever you prefer or whatever you have on hand.
FILLING INGREDIENTS
- We will also use ghee or butter for the filling.
- Unsweetened applesauce helps to create the apple filling. It adds flavor, moisture and texture.
- Coconut sugar, or brown sugar to sweeten things up!
- We will add one small diced apple to the filling for the apple flavor and crunch.
- Lastly, cinnamon to create the best apple cinnamon rolls.
Homemade icing
You only need four simple ingredients to make the homemade icing!
- Melted butter
- Milk
- Powdered sugar
- Vanilla extract
How to make cinnamon rolls and apple pie filling
STEP 1
Preheat your oven to 400 degrees and grease an 8 inch or 9 inch circle pan.
STEP 2
Start off with the wet ingredients. Add the milk and lemon juice to a medium bowl. Let it sit for 10 minutes while you gather your other ingredients. Combining the milk and lemon juice will create a homemade buttermilk. Then add the vanilla and melted butter. Whisk to combine.
STEP 3
Now combine the dry ingredients. In a large bowl add the flour, sugar, baking powder and cinnamon.
STEP 4
Then add the wet ingredients into the dry mixture. Mix with a spoon or spatula. Let the batter sit while you make your filling. This will allow the dough to thicken and make it workable.
STEP 5
Meanwhile, make the apple pie filling. In a small bowl combine all the filling ingredients: apple sauce, butter, sugar, apple and cinnamon. Mix until combined.
STEP 6
Now carefully roll out the dough on a floured surface. Using your hands or a roller press the dough into a large rectangle. Spread the apple filling in an even layer on top of the dough.
STEP 7
Roll the dough into a log. Since we are using a gluten free oat flour to make the dough, it make crack as you roll it into a log. Just be patient and gently roll it up, pinching together any cracks along the way. Once the dough is rolled into a log. Slice it in half with a very sharp knife. Then cut each half into 4 slices.
STEP 8
Add the 8 rolls to your prepared circle pan. Bake the rolls at 400 degrees for 20-22 minutes.
How to make homemade icing
Last but not least: STEP 9!
While the apple cinnamon rolls are baking, make the icing. Combine the butter, milk powdered sugar, and vanilla in a small bowl and whisk until smooth. Remove the rolls from the oven, let them cool for a minute or two then add the icing and enjoy!
Tips and tricks
Serve warm from the oven. Cinnamon rolls are best when served warm, right from the oven. Definitely allow the rolls to cool for a few minutes and then dig in!
Make the filling while the oat flour dough rests. In order for this oat flour dough to be workable, you want to let it rest for a few minutes to thicken up. While it’s resting make your apple pie filling!
Store leftovers in the freezer for a later date. What’s great about this recipe is that it’s freezer friendly. If you make a batch of these cinnamon rolls with apple pie filling store the left overs in a freezer friendly container. I recommend using parchment paper as well to help separate the rolls in the container so they don’t stick together.
