The best healthy s’mores cookies made from a mixture of almond flour and coconut flour. They are loaded with chocolate, graham crackers and marshmallows.
What are s’mores cookies?
These s’mores cookies are made from a gluten free chocolate chip cookie batter. Then, by folding in graham cracker pieces and mini marshmallows we will make the perfect s’mores cookies.
Due to the combination of marshmallows and chocolate, these cookies have a gooey and chewy center.
Ingredients you will need for the best healthy s’mores cookies
- Almond flour: For this recipe we will be using 1 1/2 cup of almond flour. I love this brand from Amazon.
- Coconut flour: We will be adding 1/4 cup of coconut flour to help add texture to these cookies.
- Baking powder: Next up is baking powder. We will need 1 tsp to help puff up these cookies!
- Egg: One egg will help bind everything together.
- Almond butter: Creamy almond butter is used for flavor and texture. You will need 1/3 cup.
- Maple syrup: Pure maple syrup is a great all natural sweetener that adds the perfect amount of sweetness in these cookies. We will mix in 1/3 cup.
- Coconut oil: For this recipe we will be using 1/4 cup of refined coconut oil as it is neutral in taste and smell.
- Vanilla extract: 1 tsp of vanilla extract will help enhance the flavor of these cookies.
- Chocolate chunks, mini marshmallows, graham crackers: What is a s’mores cookie without these 3 key ingredients! So we will be mixing in a 1/2 cup of each.

The Best Healthy S’more Cookies (Gluten Free)
Ingredients
- 1 ½ cup blanched almond flour
- ¼ cup coconut flour
- 1 tsp baking powder
- 1 egg large
- ⅓ cup smooth almond butter
- ⅓ cup pure maple syrup
- ¼ cup coconut oil melted and cooled
- 1 tsp vanilla extract
- ½ cup chocolate chip chunks
- ½ cup mini marshmallows
- ½ cup crushed graham cracker pieces
Instructions
- Preheat your oven to 350 degrees and line two cookie sheets with parchment paper.
- In a medium bowl add the almond flour, coconut flour and baking powder. Mix and set aside.
- In a large bowl add the egg, almond butter, maple syrup, coconut oil, and vanilla. Whisk until fully combined and smooth.
- Now fold the dry flour mixture into the wet mixture. Fold until just combined.
- Now fold in the chocolate chunks, mini marshmallows and crushed graham crackers.
- Scoop the cookies onto the baking sheet. Lightly press them down so they are somewhat flattened (not all the way).
- Bake at 350 for 10-12 minutes. Let the cookies cool and enjoy!
