STEP 1
Preheat your oven to 350 degrees. And line two cookie sheets with parchment paper.
STEP 2
Add the wet ingredients. Start off by creaming together the coconut sugar, maple syrup, butter, and avocado oil in a large bowl. Use a hand mixture and cream until smooth. Then add in the egg and vanilla.
STEP 3
Add in the dry ingredients. Add in the oats, oat flour, cinnamon, baking soda and salt. Continue to mix.
STEP 4
Fold in the chocolate. Use a spoon or spatula and fold in the chocolate chips.

Make sure you buy fine ground oat flour as it is the best before baking. You can also make homemade oat flour by blending whole oats in a high speed blender. You want to blend them until they form into a very fine flour.
Chocolate chips. For this recipe you can use any chocolate chips you prefer. Dark chocolate or milk chocolate chips work best! But if you’re feeling like switching things up, use white chocolate!
Butter and oil. This avocado cookie recipes uses 1/4 cup of butter and 1/4 cup of avocado oil as the baking fats. If for some reason you don’t have these on hand, you can use a combination of coconut oil or another light oil. Just make sure it is a total of 1/2 cup.

- ½ cup coconut sugar
- ¼ cup butter softened
- ¼ cup pure maple syrup
- ¼ cup avocado oil
- 1 egg
- 1 tsp vanilla extract
- 1 ½ cups quick oats
- 1 cup oat flour finely ground

- ½ tsp baking soda

- ¾ cup chocolate chips
Instructions
