My favorite way to enjoy these vegan blueberry muffins is with a hot cup of coffee. They also make the perfect grab and go snack, or they can easily be packed into lunchboxes. Any which way they are enjoyed, they will be simply, delicious!

- Baking powder and baking soda
- Coconut sugar sweetens this recipe up!
- Almond milk adds liquid and moisture
- Applesauce adds moisture and replaces the baking fat in this recipe

- Apple cider vinegar OR lemon juice can be used

Preheat oven to 350 degrees. And grease your muffin tin or line it with baking cups.
Combine dry ingredients. In a large bowl whisk the almond milk, coconut sugar, applesauce, vanilla extract and apple cider vinegar.
Add in the dry ingredients. Fold in the flour, baking powder and baking soda into the wet ingredients.
Fold in blueberries. Carefully mix in the blueberries – don’t over mix! If you’re adding chocolate chips, mix them in now too.
Bake! Scoop the batter into the prepared muffin pan and bake for 18-22 minutes.
