almond flour: I love using almond flour in baked goods. It is only made with one ingredient: ground almonds! Which makes it a healthy alternative from traditional flour. It is lower in carb and higher in fat content than traditional flour but it also has many other nutrients like vitamin E and magnesium!
coconut flour: Coconut flour a slight coconut taste and smell. It blends nicely with the almond flour in this recipe and creates the perfect texture.
baking soda: Baking soda helps increase the volume and creates structure.
eggs: Eggs add structure and moisture to these blondies.
almond butter: I love adding nut butters to my bake goods! They are a great fat substitute and add flavor and texture.
coconut sugar: Coconut sugar adds the perfect sweetness to these blondies. I love baking with coconut sugar as it is a slightly healthier alternative than regular sugar!
maple syrup: Adding a hint of maple syrup makes adds moisture and chewiness to these blondies. It pairs nicely with the coconut sugar to make the perfect sweetness.
applesauce: I love using applesauce to replace fat ingredients in recipes. Typically, you can replace it 1:1 for liquid fat!
vanilla: Vanilla adds the perfect hint of flavor to these vanilla blondies.
white chocolate chips: What are blondies without white chocolate chips? Adding white chocolate makes these blondies absolutely perfect. They are soft, chewy and loaded with white chocolate. Omit the while chocolate to make these paleo!
Soft, rich and chewy almond flour blondies
These blonde brownies (aka blondies) are so delicious and so easy to make. They are soft, rich and chewy! To make the perfect blondies all you need to do is:
- Firstly, cream or whisk together together the eggs, almond butter, coconut sugar, maple syrup, applesauce and vanilla. Cream/whisk until smooth and combined.
- Add the almond flour, coconut flour and baking soda to the wet ingredients and fold with a spoon until just combined.
- Next fold in the chocolate chips and pour batter into your prepared 8×8 pan.
- Bake at 350 for 22-24 minutes.
- Finally, let them cool before slicing and ENJOY!
How can I store these gluten free blondies
Once the blondies have fully cooled you can store them in an airtight container in the fridge. If you are making them in advance, feel free to store them in the freezer for up to three months! If you store them in the freezer, let the blondies thaw at room temperature or simply defrost them in the microwave.

- 1 ⅓ cup almond flour
- 2 tbsp coconut flour
- 1 tsp baking soda
- 2 eggs
- ⅔ cup creamy almond butter
- ½ cup coconut sugar
- 2 tbsp maple syrup
- 2 tbsp apple sauce or coconut oil
- 2 tsp vanilla
- ½ cup white chocolate chips
Instructions
- Preheat your oven to 350 degrees and grease an 8×8 pan and line it with parchment paper.
- In a large bowl whisk together the eggs almond butter, coconut sugar, maple syrup, apple sauce and vanilla. Whisk until smooth. You can also use a hand held mixture to cream these ingredients together.
- Using a spoon, fold in almond flour, coconut flour and baking soda. Then fold in the chocolate chips.
- Bake a 350 for 22-24 minutes. Let blondies cool before slicing. Enjoy!
