Ingredients we are working with
What better way to use up your browned ripe bananas than with this banana muffin recipe! When it comes to muffins, added banana is always a good idea. Browned, overripe bananas are KEY as they add the perfect amount of sweetness and mix so nicely into the batter. Another item to note is that bananas have higher levels of antioxidants as they ripen! You will need the below ingredients to make this recipe.
- Egg helps to bind all the ingredients together.
- Granulated sugar OR coconut sugar adds sweetness!
- Light oil is the baking fat we are working with. You can use light olive oil, coconut oil or canola oil.
- Plain greek yogurt adds texture and moisture.
- Mashed banana is necessary for banana muffins lol! Make sure you use ripe brown bananas.
- Vanilla extract for enhanced flavor.
- White whole wheat flour is the main flour in these muffins. It adds a great source of whole grain, vitamins and nutrients! It is also very mild in flavor which makes it great for baking.
- Ground cinnamon to enhance all the flavors
- Baking powder and baking soda help puff up these muffins.
- And just a pinch salt!

Additions
More chocolate chips. For all my chocolate lovers, add an extra handful of chocolate chips.
White chocolate. To switch things up, add a 1/2 cup of white chocolate chips!
Walnuts are great paired with banana. They make the best combination! Add in 1/2 cup of walnuts for extra crunch and flavor.
Raisins. If you aren’t a chocolate lover, substitute the chocolate chips for raisins. Raisins are a great addition as they add an all natural sweetness.
Frequently asked questions
Can I use a different type of flour?
Yes! You can use regular all purpose flour instead of white whole wheat flour.
Should I use browned bananas?
Yes, browned or overripe bananas are the best for making these muffins. Browned bananas are sweeter and have more flavor. They also mix really nicely into the batter.
What type of oil can I use?
I recommend using a lighter oil. Light olive oil, refined coconut oil, or canola oil all work really well in these muffins.
Can I add other mix ins?
Yes, mix ins are always a great addition to muffins! Feel free to use other mix ins you prefer; walnuts, raisins, more chocolate chips or extra cinnamon!
What do bananas do in baking?
Mashed ripe bananas add a lot into baked goods! Firstly, they can replace eggs in baked goods as they act as a binding agent. For this recipe the bananas add texture, flavor and moisture. Which is why I think many people use bananas in baking.
How to store
Once these muffins have fully cooled, store them in an airtight container in the fridge for a week. Also you can store these muffins in the freezer for a later date. Storing baked goods in the freezer is a great way to make them last longer. That way you always have a yummy treat on hand!
To defrost these muffins out of the freezer, you can simply let them defrost at room temperature or you can defrost them in the microwave.
