How to make this homemade chocolate granola
Start off by preheating your oven to 300 degrees and line a large baking sheet with parchment paper.
Firstly, combine all the dry ingredients in a large bowl: oats, chocolate chips, pistachios, flax seed meal, cocoa powder, and coconut sugar. Mix and set aside.
Secondly, combine all the wet ingredients in a small saucepan. Over low heat, add the almond butter, maple syrup and almond milk. Stir constantly until melty and smooth. About 1-2 minutes. Stir in vanilla extract. Do not cook too long otherwise you will melt the chocolate chips when you mix this in with the dry ingredients.
Now pour the wet mixture over the dry oat ingredients. Mix until fully combined.
Then, pour the mixture onto the prepared baking sheet. Flatten it down using a spoon or a spatula in an even layer. You can use a spoon or spatula to pack it down. Sprinkle the top with flaked sea salt.
Finally, bake the granola for 20 minutes. Turn the oven off and leave the granola in the oven for an hour.
Do not mix! Mixing the granola will not make clusters.
Once the granola has fully cooled, break it into pieces and enjoy!
How to store this pistachio granola
Once the granola has fully cooled, break it up into clusters your hands. Store it in an airtight container on the counter for 2 days or in the fridge for a week.
