These fun treats have a bottom fudgy brownie layer and they are topped with a soft and chewy chocolate chip cookie layer. These brookies are paleo friendly, gluten free and can be made dairy free. These brownie cookie bars do not disappoint!

How to make these gluten free brookies
This recipe requires two steps. First, you will want to prep your brownie batter and pour it into an 8×8 baking dish. Then, you’ll make your cookie batter and scoop it on top of the brownie batter.
STEP 1
Firstly, preheat the oven to 350 degrees and grease an 8×8 baking dish.
STEP 2
Make the brownie layer. In a medium/large bowl melt the coconut oil OR butter with the chocolate chips. Mix to combine and let it cool for about a minute.

Stir in eggs and and the coconut sugar.
STEP 4
Then, stir in the dry ingredients: almond flour, cocoa powder, baking powder and salt.
STEP 5
Pour the batter into the baking dish. Set aside.
How to make the cookie layer
And to top things off we will make the cookie layer! Gather your cookie layer ingredients.

Firstly, whisk together the wet ingredients: coconut sugar, egg, and coconut oil OR butter in a large bowl.
STEP 2
Fold in the dry ingredients: almond flour, baking soda and salt. Mix to combine.
STEP 3
Add in the chocolate chips. Mix until combined.
STEP 4
Time to add the cookie dough to the brownie layer. Scoop the cookie dough on top of the brownie batter in an even layer. Press down if necessary.

Bake! Bake these brownie cookie bars for 35-40 minutes.

Lastly, let them cool. Let the brookies cool slightly before cutting.
How to store these brownie cookie bars?
Once completely cooled, you can cut and store your brookies in the fridge or freezer.
These brownie cookie bars are really nice enjoyed chilled! So, you can keep them in the freezer. When you are ready to enjoy one (or more), remove them from the freezer and let them thaw at room temperature for a minute or two. Then enjoy!
My brother ate three of these brookies (in one sitting) straight out of the freezer – ha! You can say he loved them. If you don’t like chilled desserts you can definitely store these in the fridge for up to a week or keep at room temperature for two days.
Substitutes and variations
Butter or coconut oil. Both of these baking fats work well in this recipe. if you’re using coconut oil, make sure to use refined coconut oil as it is neutral in taste and smell.
Sugar. This recipe calls for coconut sugar. But feel free to use white sugar or some brown sugar.
Almond flour vs almond meal. For this recipe make sure you use a finely ground blanched almond flour! There are a few differences between almond flour and almond meal. Almond meal is made from raw, unpeeled almonds and almond flour is made from blanched, peeled almonds.
Baking with almond flour
Baking with almond flour is relatively simple! It is used as a gluten free flour in many baked goods and recipes. Since it is lighter in weight and has a different consistency than regular flour it can not be replaced 1:1 for traditional flour. Almond flour has a slight nutty flavor so it adds a nice flavor profile to baked goods.
Also, make sure to use finely ground almond flour! If you use a grainy almond flour it will mess with the texture integrity.
There are some benefits to baking with almond flour as well since it is only made with one ingredient: ground almonds! Some almond flour benefits include: healthy fats, rich in antioxidants, and vitamin E.

Ingredients
Brownie Layer
- ½ cup butter OR refined coconut oil melted
- ½ cup chocolate chips
- 2 eggs
- ½ cup coconut sugar
- ¾ cup almond flour
- ¼ cup cocoa powder
- ½ tsp baking powder
Cookie Layer
- 1 large egg
- ½ cup coconut sugar
- ¼ cup butter OR refined coconut oil, melted and cooled
- 1 ¼ cups blanched almond flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup chocolate chips
Instructions
Brownie Layer
- Preheat your oven to 350 degrees and grease an 8×8 baking dish or line it with parchment paper.
- First you will want to make your brownie layer. In a large microwave safe bowl melt the butter with the chocolate chips. Microwave in 15 second increments, stirring each time until fully melted. Let it cool for a minute or two.
- Now stir in eggs and the coconut sugar into the melted mixture.
- Now stir in the dry ingredients: almond flour, cocoa powder, and baking powder. Stir until fully combined.
- Pour batter into your 8×8 pan and set aside.
Cookie Layer
- Next you'll want to make your cookie layer. In a large bowl whisk the coconut sugar, egg, and melted butter until fully combined.
- Now fold in the almond flour, baking powder and salt. Mix until combined. Then fold in the chocolate chips.
- Add the cookie dough on top of the brownie batter in an even layer.
- Bake for 35-40 minutes.
- Remove brookies from the oven and let them cool slightly before cutting.
- Enjoy!
