Oatmeal chocolate chip cookies with almond butter are made from a mixture of oat flour, rolled oats and almond butter, of course!
Ingredients you’ll need to make oatmeal chocolate chip cookies
You will need the below ingredients:
- Oat flour and rolled oats
- Baking soda
- Salt
- Almond butter
- Coconut oil
- Coconut sugar
- Maple syrup
- Egg
- Vanilla extract
- Apple cider vinegar
- Chocolate chips
Healthy oatmeal chocolate chip cookies
These cookies are chewy with nutty and toasty notes of almond butter. I use to be a peanut butter or nothing type of girl but almond butter is really growing on me! I love how it can be used to replace butter and different types of oil in baked goods.
In addition to almond butter, these cookies are loaded with chocolate chips. I personally love using enjoy life dairy free chocolate chips. But feel free to use any chocolate chips you prefer. You can also add in walnuts to give these cookies a crunch but feel free to use other mix in’s like nuts and raisins.
What kind of almond butter can I use?
For this recipe I used a natural almond butter! Natural almond butter tends to be very oily and can have a layer of oil on top when you first open the jar. Make sure you stir to give it a really good stir before using! You can also use other types of nut butter for this recipe like peanut butter or even sunflower seed butter.

Easy Oatmeal Chocolate Chip Almond Butter Cookies
Ingredients
- 1 cup oat flour
- ½ cup rolled oats
- ¼ tsp baking soda
- ¼ tsp salt
- 1 egg
- ¼ cup almond butter
- ¼ cup coconut oil melted
- ¼ cup coconut sugar
- 3 Tbsp maple syrup
- 1 tsp vanilla
- 1 tsp lemon juice or apple cider vinegar
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350 and line your baking sheets with parchment paper. In a large bowl combine the oat flour, rolled oats, baking soda and salt.
- In a large bowl whisk together the egg, almond butter, coconut oil, coconut sugar, maple syrup, vanilla and lemon juice. Whisk until smooth.
- Pour dry flour ingredients into the wet mixture and mix with a spoon or spatula just until combined. Then fold in the chocolate chips. You can also fold in another add-ins at this time (walnuts, raisins, etc).
- Bake in preheated oven for 10-12 minutes. Enjoy!
