- 1 cup dried jasmine or basmati rice
- 1 cup canned full fat coconut milk
- 2 cups chicken broth

- Over medium heat on the stove, add the coconut milk and chicken broth in a medium pot.
- Bring the liquid to a boil and then add in the rice. Lower the heat to medium/low.
- Bring the rice continue to a strong simmer. Continue to let the rice simmer, stirring a couple times every minute. Stir frequently as the liquid will start to absorb so you don't want the bottom to burn.
- After 10 minutes you will notice that most of the liquid will be gone. Continue to stir for another minute or two or until the rice reaches the right consistency.
- If the rice seems to dry add a splash more chicken broth. Continue to cook until absorbed. If the rice is still to wet, continue to simmer until all the liquid is absorbed.
