I love my burgers loaded with toppings: onions, tomato, lettuce, cheese etc. Trust me, I’m a beef burger girl but there are always times where I am really just craving a thick and flavorful veggie burger. And this veggie burger is just that!
This white bean veggie burger is loaded with white beans, rice, veggies and spices. You’ll love them because they are so easy to make and taste absolutely delicious.
Ingredients in white bean veggie burgers
You will need the below ingredients to make these white bean veggie burgers.
Cannellini beans: You will need one 15 oz can of white beans. They will be the base for these burgers.
Rice: We will be using 3/4 cup of cooked rice! You can use white or brown rice, whatever you prefer.
Carrots: Shredded carrots are an added veggie in these burgers. We will be using 1/2 cup.
Raw cashews: Cashews add a slight crunch and flavor. We will boil the cashews and chop them up finely before mixing them into the burgers.
Oat flour (or bread crumbs): Oat flour will help hold everything together. You will need 1/2 cup.
Spices: We will be using a number of dried spices (chili powder, paprika, garlic powder, onion powder, cumin, oregano and salt).
Flax seed meal and water: Finally, we will be combining flax seed meal and water to create a ‘flax egg.’ This will help bind all the ingredients together.
Key steps for making the best veggie burger recipe
There are a few steps that are key for making the best veggie burger recipe.
First key step: Mash the beans with a fork! Mash about 2/3 of the beans using a fork. You want to leave some whole otherwise the burgers will be too mushy.
Second key step: Boil the raw cashews for 10 minutes. The cashews add flavor and crunch to these burger. And boiling them makes them super easy to chop and mix into the burgers.
Third key step: Add the flax seed meal and water to a small bowl. This mixture will create a ‘flax egg’ which will help bind all the ingredients together. And it acts as an egg replacement!
Last key step: Use a 1/2 measuring cup to form the patties. This is key! Grab your measuring cup, pack in the veggie burger mixture and shape it into a patty. Repeat this process for 5 patties.

Best Veggie Burger Recipe (Easy, White Beans)
Ingredients
- 1 15 oz cannellini beans
- ¾ cup cooked rice white or brown
- ½ cup cashews boiled, cooled and finely chopped
- ½ cup shredded carrots
- ¼ cup oat flour or bread crumbs
- 1 tsp of each: chili powder, smoked paprika, garlic powder, onion powder, salt, cumin, oregano
- 2 tbsp flax seed meal
- ¼ cup water
Instructions
- First, start off by preparing your cashews and rice if you haven't already. Boil your cashews for 10 minutes. Let them cool and then finely chop them up. And cook your rice according to the package.
- Also prepare your flax egg by adding 2 tbsp of flax seed meal and 1/4 cup of water in a small bowl. Mix and set aside for 10 minutes.
- Now rinse and drain the cannellini beans. And add them to a large bowl. Using a fork, mash about 2/3 the beans, leaving some whole.
- Then add the rest of the ingredients into the bowl with the beans: cooked rice, chopped cashews, shredded carrots, oat flour, seasonings, and the flax egg.
- Using a spoon mix together all the ingredients until combined.
- Now form the veggie burgers. Use a 1/2 measuring cup to help form your patties. This will make 5 patties.
- Once you have formed your patties, heat a large skillet with a tablespoon of olive oil. Once hot, add the veggie burgers and cook for about 4 minutes on each side or until golden brown.
- Serve on a bun with mayo, cheese, lettuce, tomato and onion (or anyway you prefer) and enjoy!
