Gluten free pecan sandies bring back SO many childhood memories.
Snack time was always one of the many highlights in elementary school days. It meant free time, time to chat with friends, and of course, compare snacks.
My mom would always pack me cookies and fruit for my school snack. I’m not sure why it was always this combination but I loved it. It’s all about balance right?
The cookies she packed me always changed so, it was always a fun surprise when snack time rolled around.
It was always a great day when I reached into my lunch bag and pulled pecan sandies!
Fast forward 20 years, I knew I wanted to recreate this cookie into my own (more wholesome) recipe. And this cookie recipe is just that!
What are gluten free pecan sandies?
Pecan sandies have a buttery short bread base and are loaded with crunchy pecans. These cookies have a crispy outside and soft middles that melt in your mouth. They are made with almond flour so they are naturally gluten free!

Ingredients needed for the base of these cookies
The below ingredients are used as the base of these cookies (before we fold in the pecans!).
- Butter, softened to room temperature.
- Powdered sugar will be used as the sweetener.
- A splash of almond milk to add moisture.
- Vanilla helps enhance the flavor of these cookies!
- Almond flour is the main flour used in this recipe.
- Baking soda will help these cookies rise.
- Just a pinch of salt!
Ingredients needed for candied pecans
You will need the below ingredients to make candied pecans.
- Pecans of course!
- Coconut sugar, or brown sugar will work too.
- Pure maple syrup is used as a liquid sweetener.
- And a dash of cinnamon.
How to make these cookies
Preheat your oven to 350 degrees. And line a cookie sheet with parchment paper.
Make the candied pecans. Start off by making the candied pecans so they cool while you make the cookie dough. Add all the candied pecan ingredients in a sauce pan over medium-low heat. Stir consistently for 2-3 minutes until pecans are coated. Remove the pan from the heat and set aside.
Make the cookie dough. Cream together the butter, powdered sugar, almond milk and vanilla in a stand up mixer. Cream until smooth.
Add in the dry ingredients. Add in the almond flour, baking soda and salt. Continue to mix.
Fold in the candied pecans. Use a spoon or spatula.
Scoop 12 cookies. Use a cookie scoop or a spoon and scoop the cookies onto the baking sheet.
Bake! Bake the cookies for 13-15 minutes. Let them cool for 10 minutes and enjoy!

- 6 tbsp butter softened
- ¼ cup powdered sugar
- 1 tbsp almond milk
- 1 tsp vanilla
- 1 ¼ cup almond flour
- ¼ tsp baking soda
- ¼ tsp salt
Candied Pecans
- 1 cup chopped pecans
- 3 tbsp coconut sugar
- 2 tbsp maple syrup
- ½ tsp cinnamon
Instructions
- Preheat your oven to 350 degrees and line a cookie sheet with parchment paper.
