And what’s great about oatmeal is that it can be made so many different ways: hot, cold, baked, you name it! The options are really endless and since oats are so nutritious, it’s can be fun to find new ways to enjoy them.
Sometimes a warm bowl of oatmeal sounds good, or even creamy overnight oats! But sometimes a slightly sweet oatmeal bake is the way to go! Am I right? This cinnamon roll oatmeal bake is just that; slightly sweet, with hints of cinnamon and sugar.

DRY INGREDIENTS
Oats are the main event. For this recipe we will be using 3 cups of rolled oats.
A sprinkle (or two) of cinnamon to get the cinnamon roll flavor.
Baking powder helps to puff up this oatmeal bake.
WET INGREDIENTS
Milk adds texture and moisture. Milk helps to soak and cook the oats while they bake in the oven.
Heavy cream OR half and half adds a hint of creaminess along with the milk.
Creamy almond butter also adds creaminess and flavor. It also helps to bring the ingredients together.
Coconut sugar adds sweetness and flavor. Coconut sugar is a great all natural sweetener that creates the cinnamon roll flavor.
Eggs help to bind all the ingredient together.
A splash of vanilla extract to enhance all the flavors.
ICING (optional)
Combining powdered sugar, milk, and cinnamon will create a nice (and light) icing to top this baked oatmeal. This step is optional but definitely recommended!
How to make
STEP 1
Preheat your oven to 350 degrees and grease an 8×8 or 9×9 pan and line it with parchment paper.

Combine the dry ingredients. In a large bowl, add the oats, cinnamon and baking powder. Mix and set aside.

Combine the wet ingredients. In a medium bowl, whisk together the milk, half and half, almond butter, coconut sugar, eggs, and vanilla extract.
STEP 4
Combine the wet and dry ingredients. Add the wet whisked ingredients into the bowl with the dry ingredients. Mix to combine and pour the mixture into your prepared pan.
STEP 5
Bake! Bake the oatmeal for 30-35 minutes (timing will depend on what size pan you use).
STEP 6
Make the frosting. While the oatmeal bakes, prepare the frosting in a small bowl by combining all the ingredients together.
STEP 7
Enjoy! Remove the baked oats from the oven, top with icing, and enjoy!
