- Blanched almond flour
- Oat flour
- Baking powder
- Baking soda
- Salt
- Egg
- Coconut sugar
- Butter
- Vanilla
- Apple cider vinegar
How to make the best healthy butter pecan cookies
First, you want to make your browned butter so it has time to cool. Bring the butter to a boil in a small saucepan and keep a close eye on it for browning. You will notice it will start to smell sweet and nutty and you’ll see brown particles on the bottom on the pan. Once browned, add the butter to a large mixing bowl to cool. Let it cool for at least 10 minutes.
Second, you’ll want to make the candied pecans. You can reuse the same saucepan. Add the pecans, butter and sugar over low heat. Stir mixture until the butter has melted and the pecans are coated with the butter and sugar. Turn off the heat and set aside.
Preheat your oven to 350 degrees and line two cookie sheets with parchment paper.
Now, combine the dry ingredients in a medium bowl: almond flour, oat flour, baking powder, baking soda and salt. Mix and set aside.
And then add the wet ingredients into the large bowl with the cooled browned butter: egg, coconut sugar, vanilla and apple cider vinegar. Whisk until fully combined.
Pour the dry flour mixture into the wet ingredients. Mix until almost fully combined.
Then add in the candied pecans. Mix a few times until fully incorporated.
Finally, scoop the cookie batter onto the baking sheets. This recipe makes 18 cookies. Bake at 350 for 9-10 minutes. Let the cookies cool slightly before enjoying!

Ingredients
Cookie Batter
- 1 ¼ cup blanched almond flour
- 1 cup oat flour finely ground
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 egg large
- ⅔ cup coconut sugar
- 5 tbsp butter browned
- 1 tsp vanilla
- ½ tsp apple cider vinegar
Candied Pecans
- 1 cup chopped pecans
- 1 tbsp butter
- 1 tbsp coconut sugar
Instructions
- First, make your browned butter. In a small sauce pan add the butter over medium to low heat. Stirring constantly. Bring the butter to a bowl and keep a close eye on it for browning. You will notice it will start to smell sweet and nutty. Once browned add it to a large mixing bowl to cool.
- In the same sauce pan, candy the pecans. Add the pecans, butter and coconut sugar over medium to low heat. Cook for 2-3 minutes until fully coated and the butter is melted. Set aside to cool.
- Now, preheat your oven to 350 degrees. Prepare two baking sheets by lining them with parchment paper.
- In a medium bowl, add the almond flour, oat flour, baking powder, baking soda and salt. Mix and set aside.
- Once the browned butter has cooled for about 10 minutes. Add in the egg, coconut sugar, vanilla and apple cider vinegar. Whisk until combined.
- Now fold in the dry flour ingredients into the wet ingredients. Then fold in the candied pecans.
- Scoop 18 cookies onto the prepared baking sheets. Bake at 350 for 9-10 minutes.
- Let the cookies cool slightly before enjoying!
