How to make healthy cookie dough balls
Firstly, grab a large bowl and combine almond flour, tapioca flour, maple syrup, coconut oil, vanilla and salt.
Mix until fully combined and place the bowl in the freezer for 15 minutes.
Meanwhile, grab a small bowl and melt the chocolate chips with 1 tbsp of coconut oil in the microwave.
Now, remove the dough from the freezer and roll the mixture into 15 balls.
Finally, coat each cookie dough ball in the melted chocolate.
Place the cookie dough balls on a plate lined with parchment paper. Let them set in the fridge or freezer for about 15 minutes until the chocolate has hardened.
How to store healthy cookie dough balls
These cookie dough balls are best stored in the freezer or fridge. I prefer storing them in the freezer. When you are ready to enjoy these chocolate treats, remove a few from the freezer and let them sit out at room temperature for a minute and then enjoy!

Ingredients
Cookie Dough
- 1 cup almond flour
- ½ cup tapioca flour
- ¼ cup pure maple syrup
- ¼ cup refined coconut oil OR butter melted and cooled
- 1 tsp vanilla
- ¼ tsp salt
- ¼ cup chocolate chips
Chocolate Coating
- ½ cup chocolate chips
- 1 tbsp coconut oil
Instructions
- Combine almond flour, tapioca flour, maple syrup, coconut oil, vanilla and salt in a large bowl. Fold in chocolate chips. Mix until fully combined and place the bowl in the freezer for 15 minutes.
- Meanwhile, make the chocolate coating. Add your chocolate chips and coconut oil to a medium bowl. Melt in the microwave until smooth (melt by microwaving the chocolate in 20 second increments, stirring after each increment).
- Remove your cookie dough from the freezer. It should be hard but workable. Using a spoon or your hands roll the cookie dough into 15 balls. If the cookie dough is getting too soft to work with you can place it back in the freezer for 5 minutes.
- Take each ball and roll it in the melted chocolate (I find using a fork to help works best). Place the chocolate covered cookie dough balls on a plate lined with parchment paper.
- Set the plate in the fridge or freezer to allow the chocolate to harden. Once the chocolate has hardened you can enjoy!
