This oatmeal raisin cookie recipe is made with some simple ingredients that you probably already have on hand.
- Almond flour: Almond flour is the main flour in this recipe. We will be using 2 cups. I like using finely ground blanched almond flour because I find that it gives these cookies the best consistency.
- Oats: Rolled oats are must in this recipe!
- Baking soda: Baking soda helps puff up these cookies.
- Salt: Salt helps enhance the flavor of these cookies.
- Eggs: Eggs help bind these cookie together. They also provide some moisture.
- Coconut sugar: Adding coconut sugar gives these cookies the perfect sweetness. Feel free to substitute in white sugar or brown sugar if you prefer.
- Refined coconut oil: Refined coconut oil is neutral in taste and smell. You can use regular, unrefined coconut oil as well but the cookies may have a slight coconut taste and smell.
- Almond butter: Almond butter helps add a chewy texture to these cookies. Feel free to use any creamy nut butter that you like.
- Vanilla extract: A splash of vanilla extract helps enhance the flavor of these cookies.

Almond flour is higher in fats and lower in carbs than traditional flour but it offers many other nutritional benefits like vitamin E, protein and magnesium.
The main sweetener in this recipe is coconut sugar. Besides being a great substitute for white and brown sugar, coconut sugar is a great natural plant based sweetener. However, regular sugar and coconut sugar do have very similar qualities when it comes to nutrition and calories.
Lastly, oats! They add flavor and a slight chewy texture in these cookies. Oats also have many great nutritional benefits such as whole grains, protein and fiber.

Healthy Oatmeal Raisin Cookies (gluten free)
Ingredients
- 2 cups almond flour
- 1 cup rolled oats
- 1 tsp cinnamon
- ½ tsp baking soda
- ¼ tsp salt
- 2 eggs large
- ½ cup coconut sugar
- ½ cup coconut oil melted and cooled
- ½ cup almond butter or creamy nut butter of choice
- 1 tsp vanilla extract
- 1 tsp apple cider vinegar
- 1 ½ cup raisins
Instructions
- Preheat your oven to 350 degrees. Line two cookie sheets with parchment paper.
- In a medium bowl add the almond flour, oats, cinnamon, baking soda and salt. Mix and set aside.
- In a large bowl whisk together the eggs, coconut sugar, coconut oil, almond butter, vanilla and apple cider vinegar. Whisk until smooth.
- Fold in the dry flour mixture into the wet mixture just until combined. Now gently fold in the raisins.
- Using a spoon or a cookie scoop, make 24 cookies and place them evenly spaced on the baking sheets. Lightly flatten the cookies so they are about ¼-½ inch thick.
- Bake for 10-12 minutes.
- Let the cookies cool slightly and then enjoy!
