No bake gingerbread truffles are the perfect treat to make for the holidays! These cute little bites are naturally gluten free and naturally sweetened with pure maple syrup.
What are gingerbread truffles?
These gingerbread truffles are very similar to chocolate truffles.
Truffles are a type of dessert that, traditionally, have a chocolate center that is coated in more chocolate! Their name actually came from their resemblance to real fungi truffles.
These gingerbread bites are a similar concept except they have a gingerbread center and a white chocolate coating.
Ingredients needed for these easy no bake gingerbread truffles
To make these gingerbread truffles you will need the below ingredients:
- Cashew butter, make sure its smooth and creamy.
- Oat flour, I love this kind because it is very finely ground and creates a nice texture.
- Coconut flour is the other flour used to help create the perfect texture.
- Maple syrup is the sweetener used! Maple syrup is a great all natural sweetener.
- Molasses, just a tablespoon of molasses to enhance the gingerbread flavor.
- Cinnamon and ginger are used to create the gingerbread flavor.
- White chocolate chips are used for the coating! Feel free to use chocolate if you prefer.
- Coconut oil, just a tablespoon of coconut oil to help melt the chocolate. The coconut oil helps create very smooth chocolate which makes it super easy to work with.

Roll the dough into 9 balls. Using your hands, roll the dough into 9 balls. Place them on a baking sheet lined with parchment paper. Set the baking sheet in the fridge while you prepare the chocolate coating.
Melt the white chocolate. Fill a small sauce pan 1/4 of the way with water. Bring to a boil. Place a slightly smaller heat safe bowl on the saucepan. Add the white chocolate and coconut oil. Use tongs to help hold the bowl on the saucepan. Stir the chocolate consistently until it becomes smooth and melted.
Dip each ball in chocolate. Use a fork to dip and cover the gingerbread bites in chocolate. Use another fork to help place them on the cookie sheet. Top each ball with festive sprinkles.
