- Pure canned pumpkin will be used, make sure it’s not pumpkin pie mix. You want all natural canned pumpkin with no extra added ingredients.
- Almond milk will add some liquid. You can also use cows milk, oat milk, coconut milk, or any dairy free milk of choice.
- Refined coconut oil will be used as it is neutral in taste and smell. You can also use an other light oil of your choice.
- Maple syrup adds the perfect amount of sweetness. Make sure to use pure maple syrup as it does not have an added ingredients or preservatives.
- 1 teaspoon of lemon juice helps react with the baking soda to get fluffy waffles!
- One egg will bind all the ingredients together!
- Whole grain oat flour will be used in this recipe. Oat flour is a great flour alternative as it is 100% whole grain. You will get all the added benefits that oats have to offer like fiber, wholesome carbohydrates, and vitamins.
- Cinnamon and pumpkin pie spice add a hint of fall flavor. Feel free to add more or less spice depending on your preference.
- Lastly, baking soda will help puff up these waffles!

Pumpkin Waffle Recipe with Oat Flour
Ingredients
Wet Ingredients
- ½ cup canned pumpkin
- ½ cup almond milk
- 3 tbsp oil, butter, or refined coconut oil
- 2 tbsp maple syrup
- 1 tsp lemon juice
- 1 egg
Dry Ingredients
- 1 ¼ cup oat flour
- 1 tsp cinnamon
- ½ tsp pumpkin pie spice
- ¼ tsp baking soda
Instructions
- In a large bowl, whisk together the pumpkin, almond milk, oil, maple syrup, lemon juice and the egg. Whisk until combined and smooth.
- Now stir in the oat flour, cinnamon, pumpkin pie spice, and baking soda. Fold until combined.
- Preheat your mini waffle skillet.
- Now take a heaping 1/4 cup scoop of batter and add it to the skillet.
- Repeat 7 times to make 7 mini waffles.
