Power Balls (Easy, Gluten Free, No Bake)
Ingredients
- 10 small/medium medjool dates or 7 large dates
- 1 cup oats or gluten free oats
- 1 cup natural creamy peanut butter
- ½ cup mini chocolate chips
Instructions
- Start out by soaking the dates in hot water for 10 minutes. Reserve the soaking water as we will be using it in the mixture!
- Now add the dates to the food processor along with 2 tablespoons of date water (if you pour out the date water by accident just use regular water!) Pulse 4-5 times until they break down a bit. They should be almost in paste form. Some chunks are ok!
- Then add in the oats and peanut butter. If you're using natural peanut butter make sure you give it a good stir as natural peanut butter can be oily. Continue to pulse until combined and the mixture comes together. Scrape down the sides with a spatula if necessary.
- Add 1-2 more tablespoons of date water if the mixture is too dry. Then add chocolate chips and pulse a few more times until combined.
- Using your hands take about a tablespoon of the mixture and roll it into a ball. Repeat until you have 20 energy bites.
- Store bites in the fridge until they are ready to be enjoyed!
