The trick to these strawberry shortcake overnight oats is a creamy oat base, freshly chopped strawberries, and crushed graham crackers. You’ll just need a few simple ingredients that you like’y already have in your pantry. You’re going to love this recipe:

Ingredients in strawberry cheesecake overnight oats
Oats are the main ingredient! Feel free to use rolled oats, gluten free oats, or quick oats.
Milk adds creaminess and flavor. Feel free to use cows milk, almond milk, or any dairy free milk of your choice. Please note using different types of milk will change creaminess!
Greek yogurt also adds creaminess, flavor, and a bit of protein. You can use plain greek yogurt, vanilla greek yogurt, or strawberry greek yogurt.
Cream cheese, of course! To get cheesecake overnight oats we will add a hint of cream cheese.
Chia seeds add texture and nutrients. When chia seeds are soaked in liquid they create a gel-like texture and pair perfectly with the oats.
Maple syrup for a hint of sweetness. You can also use honey. If you prefer less sweet you can omit the maple syrup.
Strawberries, of course! Strawberries are a must for strawberry shortcake overnight oats.
Lastly, graham cracker! Graham crackers add crunch and flavor and tie into the strawberry shortcake flavor.
How to make
Here’s how to make these easy strawberry overnight oats. Just follow these four steps below!
STEP 1
Firstly, grab a medium size glass container with a lid or a mason jar.
STEP 2
Secondly, add all the ingredients (except strawberries and graham crackers): oats, milk, yogurt, cream cheese, chia seeds, and maple syrup to the mason jar.
STEP 3
Thirdly, mix well and then store the oats in the fridge overnight.
STEP 4
Remove the oats from the fridge in the morning, top with chopped strawberries and crush graham crackers, and enjoy! These oats are best when enjoyed within 2-3 days.
Variations and substitutes
Whole oats or quick oats. For this recipe you can use whole old fashioned oats or quick oats. You can also use gluten free oats.
Milk or almond milk. For super creamy oatmeal definitely use milk. Cows milk and almond milk are some of my favorite options. You can also use oat milk, or any dairy free milk of choice. Please don’t use water as it won’t make creamy oats!
Nuts and seeds. Along with the crushed graham crackers, add nuts or seeds for more crunch and flavor. You can add a tablespoon of your favorite nuts – like walnuts, peanuts, cashews or almonds.
Maple syrup or honey. A splash of maple syrup sweetens up these oats. But you can also use honey! If you don’t want added sweetness, you can omit the natural sweeteners all together.
Greek yogurt. This recipe 1/4 cup of strawberry greek yogurt. But feel free to switch things up! You can use plain greek yogurt or vanilla greek yogurt as well. Also, if you’re dairy free definitely substitute in your favorite dairy free yogurt.
