It is lower in carbohydrates and higher in fat content than traditional flour but it also has many other nutrients and vitamins!&nbsp;</p>



<p class="has-large-font-size wp-block-paragraph">The texture of this almond flour cookie is just amazing. Using blanched, finely ground almond flour is key in this recipe. You want the almond flour to be finely ground (not grainy) otherwise your baked goods will be gritty or mealy. Blanched almond flour is made from almonds with skins removed so it is much finer. <p class="has-large-font-size wp-block-paragraph"><strong>Preheat your oven. </strong>Preheat the oven to 350 degrees and get your 10 inch cast iron skillet. If your cast iron isn&#8217;t seasoned, grease it with some butter or light oil.</p>



<p class="has-large-font-size wp-block-paragraph"><strong>Combine the wet ingredients.</strong> In a large bowl, whisk the egg, egg yolk, almond butter, coconut sugar, maple syrup and vanilla extract. Whisk until combined and smooth. </p>



<p class="has-large-font-size wp-block-paragraph"><strong>Add the dry ingredients.</strong> Now fold the dry ingredients into the wet mixture: <em>almond flour,</em> <em>baking soda</em> <em>and salt. </em>Mix until combined and then fold in the chocolate chips. </p>
