<h2 class="wp-block-heading">Main ingredients in blueberry breakfast muffins</h2>



<p class="has-large-font-size"><strong><a href="https://www.amazon.com/Watkins-Original-Gourmet-Vanilla-Packaging/dp/B0046EJ570/ref=sr_1_4?dchild=1&amp;keywords=vanilla+extract&amp;qid=1628620788&amp;s=grocery&amp;sr=1-4">Oat flour:</a></strong> Finely ground oat flour makes perfectly chewy and fluffy baked goods. And it only has one ingredient: oats! They also provide a great source of healthy carbs, fibers and whole grains. These are some of the few reasons I love to bake with oat flour.</p>



<p class="has-large-font-size"><strong>Ground flaxseed:</strong> Ground flaxseed contains many healthy components. I love adding flax into my recipes whenever possible as it adds additional fiber!</p>



<p class="has-large-font-size"><strong><a href="https://www.amazon.com/Butternut-Mountain-Farm-Vermont-Natural/dp/B002483SRI/ref=sr_1_4?dchild=1&amp;keywords=maple+syrup&amp;qid=1628278582&amp;s=grocery&amp;sr=1-4">Maple syrup:</a> </strong>Maple syrup adds sweetness to these muffins. It is also a great natural sugar substitute. </p>



<p class="has-large-font-size"><strong>Applesauce: </strong>I love trying to incorporate applesauce into my recipes whenever I can. It is a great fat replacer and it helps add moisture. Applesauce also reduces the calories in baked goods because you are typically subbing it in for fat like butter and oil. </p>



<p class="has-large-font-size"><strong><a href="https://www.amazon.com/BetterBody-Foods-Organic-Naturally-Refined/dp/B00U1RKGOW/ref=sr_1_6?dchild=1&amp;keywords=coconut+oil&amp;qid=1628278625&amp;s=grocery&amp;sr=1-6">Coconut oil:</a></strong> Coconut oil adds moisture to these muffins, keeping them moist and fluffy. When I bake with coconut oil, I prefer to use refined coconut oil as it has a neutral flavor. You won&#8217;t get a strong coconut flavor or smell. On the other hand, unrefined coconut oil has a much stronger coconut taste and smell. Both are totally fine to use, it&#8217;s just a personal preference! Feel free to use another light oil or butter instead.</p>

<h2 class="wp-block-heading">Tips and substitutes for healthy breakfast muffins</h2>



<p class="has-large-font-size"><strong>Add extra blueberries on top.</strong> After scooping the batter into the muffin pan, take 2 to 3 blueberries and press them into the top of each muffin. Bake as instructed!</p>



<p class="has-large-font-size"><strong>Sprinkle cinnamon sugar on top</strong>. Combine about 2 tbsps coconut sugar and 1 tsp cinnamon in a small bowl. Using a spoon, sprinkle the mixture on top of each muffin before baking.</p>



<p class="has-large-font-size"><strong>Substitute the coconut oil. </strong>If you aren&#8217;t a fan of coconut oil or simply don&#8217;t have it on hand, feel free to use another neutral oil or melted butter. </p>



<p class="has-large-font-size"><strong>Add chocolate chips.</strong> Where are my chocolate lovers? Add in 1/2 cup of chocolate chips for added sweetness.</p>



<p class="has-large-font-size"><strong>Use honey as the sweetener.</strong> Instead of pure maple syrup, you can replace it 1:1 for honey. </p>
