<p class="has-normal-font-size wp-block-paragraph">These gingerbread truffles are very similar to chocolate truffles. </p>



<p class="has-normal-font-size wp-block-paragraph">Truffles are a type of dessert that, traditionally, have a chocolate center that is coated in more chocolate! Their name actually came from their resemblance to real fungi truffles. </p>



<p class="has-normal-font-size wp-block-paragraph">These gingerbread bites are a similar concept except they have a gingerbread center and a white chocolate coating.</p>

<h2 class="wp-block-heading" id="ingredients-needed-for-these-easy-no-bake-gingerbread-truffles">Ingredients needed for these easy no bake gingerbread truffles</h2>



<p class="has-normal-font-size wp-block-paragraph">To make these gingerbread truffles you will need the below ingredients:</p>



<ul class="has-normal-font-size wp-block-list"><li><strong>Cashew butter</strong>, make sure its smooth and creamy. </li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>Oat flour,</strong> I love <a href="https://www.amazon.com/Watkins-Original-Gourmet-Vanilla-Packaging/dp/B0046EJ570/ref=sr_1_4?dchild=1&amp;keywords=vanilla+extract&amp;qid=1628620788&amp;s=grocery&amp;sr=1-4">this kind</a> because it is very finely ground and creates a nice texture.</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong><a href="https://www.amazon.com/Organic-Coconut-Anthonys-Verified-Gluten-Free/dp/B00BSZBEAG/ref=sr_1_4?dchild=1&amp;keywords=coconut+flour&amp;qid=1628620723&amp;s=grocery&amp;sr=1-4">Coconut flour</a></strong> is the other flour used to help create the perfect texture. </li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong><a href="https://www.amazon.com/Butternut-Mountain-Farm-Vermont-Natural/dp/B002483SRI/ref=sr_1_4?dchild=1&amp;keywords=maple+syrup&amp;qid=1628278582&amp;s=grocery&amp;sr=1-4">Maple syrup</a></strong> is the sweetener used! Maple syrup is a great all natural sweetener. </li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>Molasses</strong>, just a tablespoon of molasses to enhance the gingerbread flavor.</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>Cinnamon</strong> and <strong>ginger</strong> are used to create the gingerbread flavor.</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>White chocolate chips</strong> are used for the coating! Feel free to use chocolate if you prefer.</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>Coconut oil</strong>, just a tablespoon of coconut oil to help melt the chocolate. The coconut oil helps create very smooth chocolate which makes it super easy to work with. </li></ul>

<h2 class="wp-block-heading" id="how-to-make-these-gluten-free-truffles">How to make these gluten free truffles</h2>



<p class="has-normal-font-size wp-block-paragraph"><strong>Add the ingredients together. </strong>In a large bowl add the <em>cashew butter, oat flour, coconut flour, maple syrup, molasses, cinnamon and ginger</em>. Mix until combined and a dough forms. </p>



<p class="has-normal-font-size wp-block-paragraph"><strong>Roll the dough into 9 balls.</strong> Using your hands, roll the dough into 9 balls. Place them on a baking sheet lined with parchment paper. Set the baking sheet in the fridge while you prepare the chocolate coating. </p>



<p class="has-normal-font-size wp-block-paragraph"><strong>Melt the white chocolate. </strong>Fill a small sauce pan 1/4 of the way with water. Bring to a boil. Place a slightly smaller heat safe bowl on the saucepan. Add the white chocolate and coconut oil. Use tongs to help hold the bowl on the saucepan. Stir the chocolate consistently until it becomes smooth and melted.</p>



<p class="has-normal-font-size wp-block-paragraph"><strong>Dip each ball in chocolate. </strong>Use a fork to dip and cover the gingerbread bites in chocolate. Use another fork to help place them on the cookie sheet. Top each ball with festive sprinkles. </p>



<p class="has-normal-font-size wp-block-paragraph"><strong>Chill in the fridge</strong>. Set the gingerbread bites back in the fridge for 15 minutes or until the chocolate has fully hardened. Enjoy!</p>

<p class="has-normal-font-size wp-block-paragraph">You can substitute <strong>almond butter</strong> for the cashew butter with an even 1:1 swap!</p>



<p class="has-normal-font-size wp-block-paragraph">Instead of using maple syrup as the sweetener, you can use <strong>honey.</strong></p>



<p class="has-normal-font-size wp-block-paragraph">If you don&#8217;t like white chocolate, feel free to use <strong>milk or dark chocolate</strong> instead.</p>



<p class="has-normal-font-size wp-block-paragraph">Add <strong>1/4 tsp of nutmeg and allspice</strong> for an extra boost of gingerbread flavor.</p>

<ul class="has-normal-font-size wp-block-list"><li><strong>Firstly,</strong> fill a small sauce pan 1/4 of the way with water. Bring to a boil.</li><li><strong>Secondly,</strong> place the slightly smaller heat safe bowl on the saucepan. Add the white chocolate and coconut oil. You can use tongs to help hold the bowl on the saucepan.</li><li><strong>Thirdly,</strong>  stir the chocolate consistently until it becomes smooth and melted.</li></ul>

<h2 class="wp-block-heading" id="how-to-dip-gingerbread-truffles-in-chocolate">How to dip gingerbread truffles in chocolate</h2>



<p class="has-normal-font-size wp-block-paragraph">Dip each gingerbread truffle in the melted chocolate. Use a fork to dip and cover the truffle in white chocolate. Use another fork to help place them on the cookie sheet.</p>



<p class="has-normal-font-size wp-block-paragraph">If the chocolate starts to harden, simply add it back onto the saucepan over low heat for another minute or two.</p>



<p class="has-normal-font-size wp-block-paragraph">Also, you can add an additional teaspoon on coconut oil if the chocolate mixture is too thick.</p>
