<p class="has-large-font-size wp-block-paragraph">This recipe requires two steps. First, you will want to prep your brownie batter and pour it into an 8&#215;8 baking dish. Then, you&#8217;ll make your cookie batter and scoop it on top of the brownie batter. </p>



<p class="has-large-font-size wp-block-paragraph"><strong>STEP 1</strong></p>



<p class="has-large-font-size wp-block-paragraph"><strong>Firstly, preheat the oven to 350 degrees</strong> and grease an 8&#215;8 baking dish. </p>



<p class="has-large-font-size wp-block-paragraph"><strong>STEP 2</strong></p>



<p class="has-large-font-size wp-block-paragraph"><strong>Make the brownie layer.</strong> In a medium/large bowl melt the coconut oil OR butter with the chocolate chips. Mix to combine and let it cool for about a minute. </p>



<p class="has-large-font-size wp-block-paragraph"><strong>STEP 3</strong></p>



<p class="has-large-font-size wp-block-paragraph"><strong>Stir in eggs and and the coconut sugar.</strong></p>



<p class="has-large-font-size wp-block-paragraph"><strong>STEP 4</strong></p>



<p class="has-large-font-size wp-block-paragraph"><strong>Then, stir in the dry ingredients:</strong> <em>almond flour, cocoa powder, baking powder and salt. </em></p>



<p class="wp-block-paragraph"><strong>STEP 5</strong></p>



<p class="has-large-font-size wp-block-paragraph"><strong>Pour the batter into the baking dish</strong>. Set aside.</p>

<p class="has-large-font-size wp-block-paragraph"><strong>Firstly, whisk together the wet ingredients:</strong> <em>coconut sugar, egg, and coconut oil OR butter</em> in a large bowl.</p>



<p class="has-large-font-size wp-block-paragraph"><strong>STEP 2</strong></p>



<p class="has-large-font-size wp-block-paragraph"><strong>Fold in the dry ingredients: </strong><em>almond flour, baking soda and salt. </em>Mix to combine.</p>



<p class="has-large-font-size wp-block-paragraph"><strong>STEP 3</strong></p>



<p class="has-large-font-size wp-block-paragraph"><strong>Add in the chocolate chips.</strong> Mix until combined. </p>



<p class="has-large-font-size wp-block-paragraph"><strong>STEP 4</strong></p>



<p class="has-large-font-size wp-block-paragraph"><strong>Time to add the cookie dough to the brownie layer. </strong>Scoop the cookie dough on top of the brownie batter in an even layer. Press down if necessary. </p>



<p class="has-large-font-size wp-block-paragraph"><strong>STEP 5</strong></p>



<p class="has-large-font-size wp-block-paragraph"><strong>Bake! </strong>Bake these brownie cookie bars for 35-40 minutes. </p>

<p class="has-large-font-size wp-block-paragraph"><strong>Lastly, let them cool. </strong>Let the brookies cool slightly before cutting.</p>

<p class="has-large-font-size wp-block-paragraph">Once completely cooled, you can cut and store your brookies in the fridge or freezer. </p>



<p class="has-large-font-size wp-block-paragraph">These brownie cookie bars are really nice enjoyed chilled! So, you can keep them in the freezer. When you are ready to enjoy one (or more), remove them from the freezer and let them thaw at room temperature for a minute or two. Then enjoy!</p>



<p class="has-large-font-size wp-block-paragraph">My brother ate three of these brookies (in one sitting) straight out of the freezer &#8211; ha! You can say he loved them. If you don&#8217;t like chilled desserts you can definitely store these in the fridge for up to a week or keep at room temperature for two days.</p>

<h2 class="wp-block-heading">Substitutes and variations</h2>



<p class="has-large-font-size wp-block-paragraph"><strong>Butter or coconut oil.</strong> Both of these baking fats work well in this recipe. if you&#8217;re using coconut oil, make sure to use refined coconut oil as it is neutral in taste and smell. </p>



<p class="has-large-font-size wp-block-paragraph"><strong>Sugar.</strong> This recipe calls for coconut sugar. But feel free to use white sugar or some brown sugar.</p>



<p class="has-large-font-size wp-block-paragraph"><strong>Almond flour</strong> vs <strong>almond meal. </strong>For this recipe make sure you use a finely ground blanched almond flour! There are a few differences between almond flour and almond meal. Almond meal is made from raw, unpeeled almonds and almond flour is made from blanched, peeled almonds. </p>

<h2 class="wp-block-heading">Baking with almond flour</h2>



<p class="has-large-font-size wp-block-paragraph">Baking with almond flour is relatively simple! It is used as a gluten free flour in many baked goods and recipes. Since it is lighter in weight and has a different consistency than regular flour it can<strong> not</strong> be replaced 1:1 for traditional flour. Almond flour has a slight nutty flavor so it adds a nice flavor profile to baked goods.</p>



<p class="has-large-font-size wp-block-paragraph">Also, make sure to use finely ground almond flour! If you use a grainy almond flour it will mess with the texture integrity. </p>



<p class="has-large-font-size wp-block-paragraph">There are some benefits to baking with almond flour as well since it is only made with one ingredient: ground almonds! Some almond flour benefits include: healthy fats, rich in antioxidants, and vitamin E. </p>
