<p class="has-large-font-size">If you love chocolate and peppermint, these cookies are for you! I am a mint chocolate chip lover through and through. Growing up, mint chocolate chip ice cream was <em>always</em> my go to. </p>



<p class="has-large-font-size">To be honest, I&#8217;m not sure why because I love chunky cookie dough or peanut butter moose tracks ice cream but, I always seemed to resort back to mint chocolate chip. It never failed me lol! Anyway, I digress. </p>



<p class="has-large-font-size">These peppermint cookies definitely satisfy my chocolate peppermint cravings. Between the fudgy chocolate cookie and the sweet vanilla peppermint frosting, you can&#8217;t go wrong! </p>

<h2 class="wp-block-heading" id="how-to-make-these-chocolate-brownie-cookies">How to make these chocolate brownie cookies</h2>



<p class="has-large-font-size">Follow these few simple steps to whip up this recipe. Start out by preheating your oven to 350 degrees and lining two cookie sheets with parchment paper. </p>



<p class="has-large-font-size"><strong>STEP 1</strong></p>



<p class="has-large-font-size"><strong>Firstly, melt the chocolate and butter.</strong> In a large microwave safe bowl, melt the chocolate and butter together. Microwave in 15 second increments, stirring after each time, until fully melted. Let it cool.</p>



<p class="has-large-font-size"><strong>STEP 2</strong></p>



<p class="has-large-font-size"><strong>Secondly, add in the egg and sugar.</strong> Whisk the egg and sugar into the melted chocolate mixture. </p>



<p class="has-large-font-size"><strong>STEP 3</strong></p>



<p class="has-large-font-size"><strong>Next, fold in the dry ingredients. </strong>Now, fold in the almond flour, cocoa powder, baking soda and salt. Mix until combined and smooth. </p>



<p class="has-large-font-size"><strong>STEP 4</strong></p>



<p class="has-large-font-size"><strong>Lastly, bake!</strong> Scoop the cookies on to two baking sheets lined with parchment paper. Bake at 350 degrees for 11-14 minutes. </p>

<h2 class="wp-block-heading" id="how-to-make-the-vanilla-peppermint-frosting">How to make the vanilla peppermint frosting</h2>



<p class="has-large-font-size"><strong>To start,</strong> <strong>crush the candy canes</strong>. Take your candy canes and place them in a small zip lock baggy. Using a rolling pin or large spoon, lightly tap on the candy canes until they are crushed. Set aside.</p>



<p class="has-large-font-size"><strong>Next, cream the butter.</strong> Make sure your butter is softened and at room temperature. Using a hand mixer or a stand up mixture, cream your butter. </p>



<p class="has-large-font-size"><strong>Add the remaining ingredients.</strong> Add half of the powdered sugar in with the butter. Cream until smooth. Now add the remaining powder sugar, peppermint extract and almond milk. Beat on low until smooth. </p>



<p class="has-large-font-size"><strong>Fold in the candy canes. </strong>Using a spoon or spatula, fold in the candy canes. </p>



<p class="has-large-font-size"><strong>Spread icing on cooled cookies.</strong> Using a pastry knife or a smooth butter knife, spread the icing on top of each cookie. </p>



<p class="has-large-font-size"><strong>Lastly, enjoy <strong><em>(my favorite step)</em></strong>!!!!</strong> Top the cookies with more crush candy canes <em>(optional, but recommend)</em> and enjoy!</p>

<p class="has-large-font-size">Once these brownie cookies have fully cooled, store them in an airtight container in the fridge for a week. I find that they are best served chilled due to the icing.</p>



<p class="has-large-font-size">Also, you can store them in the freezer! Store the cookies in a freezer friendly container or bag for up to 3 months. When you&#8217;re ready to enjoy them, simply let them thaw at room temperature. You can also defrost in the microwave (Personally, I love enjoying them slightly warm)! </p>
