<h2 class="wp-block-heading" id="ingredients-needed-to-make-healthier-monster-cookie-granola">Ingredients needed to make healthier monster cookie granola</h2>



<p class="has-normal-font-size">You&#8217;ll need the below ingredients to whip up this monster cookie granola. </p>



<ul class="has-normal-font-size wp-block-list"><li><strong>Oats: </strong>Oats are the main ingredient, we will use 3 cups.  </li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>Peanuts</strong>: Peanuts add some crunch to this granola. I like using roasted and salted. </li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong><a href="https://www.amazon.com/Enjoy-Life-Baking-Chocolate-Gluten/dp/B000VK5VTO/ref=sr_1_4?crid=QR00T7EBI40C&amp;dchild=1&amp;keywords=enjoy+life+chocolate+chips&amp;qid=1628278484&amp;s=grocery&amp;sprefix=enjoy+life%2Cgrocery%2C169&amp;sr=1-4">Chocolate chips</a></strong>: I love <a href="https://www.amazon.com/Enjoy-Life-Baking-Chocolate-Gluten/dp/B000VK5VTO/ref=sr_1_4?crid=QR00T7EBI40C&amp;dchild=1&amp;keywords=enjoy+life+chocolate+chips&amp;qid=1628278484&amp;s=grocery&amp;sprefix=enjoy+life%2Cgrocery%2C169&amp;sr=1-4">these</a> chocolate chips but feel free to use your favorite!</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>M&amp;M&#8217;s</strong>: Next up, we will add M&amp;Ms as they are a main ingredient in monster cookies.</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>Flaxseed meal, <em>optional but recommended</em></strong>: Adding in 1/4 cup of flaxseed meal adds fiber and nutrients.</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>Salt</strong>: A pinch of salt will help enhance the flavor.</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>Peanut butter</strong>: Another main ingredient = peanut butter! I find that all natural creamy peanut butter works best.</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong><a href="https://www.amazon.com/Madhava-Organic-Coconut-Sugar-Pound/dp/B00BBDJJL6/ref=sr_1_4?dchild=1&amp;keywords=coconut+sugar&amp;qid=1628278545&amp;s=grocery&amp;sr=1-4">Coconut sugar</a></strong>: We will use 1/3 cup of coconut sugar to sweeten things up!</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>Honey, <em>or <a href="https://www.amazon.com/Butternut-Mountain-Farm-Vermont-Natural/dp/B002483SRI/ref=sr_1_4?dchild=1&amp;keywords=maple+syrup&amp;qid=1628278582&amp;s=grocery&amp;sr=1-4">maple syrup</a></em></strong>: Another all natural sweetener to help hold everything together and add sweetness. feel free to use either honey or <a href="https://www.amazon.com/Butternut-Mountain-Farm-Vermont-Natural/dp/B002483SRI/ref=sr_1_4?dchild=1&amp;keywords=maple+syrup&amp;qid=1628278582&amp;s=grocery&amp;sr=1-4">maple syrup</a>.</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong>Water, <em>or <a href="https://www.amazon.com/BetterBody-Foods-Organic-Naturally-Refined/dp/B00U1RKGOW/ref=sr_1_6?dchild=1&amp;keywords=coconut+oil&amp;qid=1628278625&amp;s=grocery&amp;sr=1-6">coconut oil</a></em></strong>: Adding water or coconut oil to the wet ingredients helps mix everything together.</li></ul>



<ul class="has-normal-font-size wp-block-list"><li><strong><a href="https://www.amazon.com/Watkins-Original-Gourmet-Vanilla-Packaging/dp/B0046EJ570/ref=sr_1_4?dchild=1&amp;keywords=vanilla+extract&amp;qid=1628620788&amp;s=grocery&amp;sr=1-4">Vanilla extract</a></strong>: Lastly, a tablespoon of vanilla extract to enhance the flavors.</li></ul>

<h2 class="wp-block-heading" id="what-is-a-monster-cookie">What is a monster cookie? </h2>



<p class="has-normal-font-size">Monster cookies are cookies loaded with oats, chocolate chips, peanut butter and M&amp;Ms. They are essentially a mix between an oatmeal cookie and a peanut butter cookie with some added mix ins. </p>



<p class="has-normal-font-size">I took the classic monster cookie recipe and made it into granola! </p>

<h2 class="wp-block-heading" id="how-to-make-the-best-monster-cookie-granola">How to make the best monster cookie granola</h2>



<p class="has-normal-font-size">Follow the below steps to make this monster cookie granola.</p>



<p class="has-normal-font-size"><strong>Firstly</strong>, <strong>combine all the dry ingredients. </strong>In a large bowl add the oats, peanuts, chocolate chips, m&amp;m&#8217;s, flaxseed meal and salt. </p>



<p class="has-normal-font-size"><strong>Secondly, whisk together all the wet ingredients</strong>. Grab a medium bowl and add the peanut butter, honey, coconut sugar, water, and vanilla extract. </p>



<p class="has-normal-font-size"><strong>Thirdly, pour the wet ingredients into the dry ingredients. </strong>Mix until fully combined. Now dump the mixture onto a large baking sheet lined with parchment paper. </p>



<p class="has-normal-font-size"><strong>Next, pat down the granola using a spatula or spoon.</strong> You want the granola to be in a flat and even layer on the baking sheet. </p>



<p class="has-normal-font-size"><strong>Bake at 300 for 18 minutes.  </strong></p>



<p class="has-normal-font-size"><strong>Finally, let the granola fully cool. </strong>This last step is key to making large clusters! Do not mix or stir. Turn off the oven and let the granola cool for 2 hours. </p>



<p class="has-normal-font-size">Once it has fully cooled, break it into clusters and enjoy!</p>

<h2 class="wp-block-heading" id="how-to-store-this-healthy-granola-recipe">How to store this healthy granola recipe</h2>



<p class="has-normal-font-size">Store the cooled granola in an airtight container in the fridge. Keeping the granola in the fridge makes it last much longer. You can leave it in the fridge for up to a week (plus a few more days lol). </p>
