<p class="has-large-font-size">Here&#8217;s what you need to make this pumpkin seed granola recipe.</p>



<p class="has-large-font-size"><strong>Oats</strong>, duh! They are the main event. For this recipe we will be using 3 cups of whole rolled oats. </p>



<p class="has-large-font-size"><strong>Pumpkin seeds</strong> for pumpkin granola are a must. These seeds not only add a nice crunch but they also add a wide variety of benefits. Pumpkin seeds are rich in vitamins and minerals like fiber, protein and vitamin K (to name a few)!</p>



<p class="has-large-font-size">Another tasty nut to add some crunch; <strong>slivered almonds!</strong> Almonds add such a nice touch to this granola. They add crunch, healthy fats and magnesium, fiber and vitamin E. </p>



<p class="has-large-font-size"><strong>Shredded coconut</strong> is always a good idea in my book. Coconut helps enhance all the flavors and really adds a yummy element to this granola. </p>



<p class="has-large-font-size"><strong>Raisins</strong> are a great addition because they add an all natural sweetness. </p>



<p class="has-large-font-size"><strong>Cinnamon</strong> and <strong>pumpkin pie spice </strong>to get all those fall flavors. Feel free to scale up or scale back the spices depending on your liking. </p>



<p class="has-large-font-size"><strong>Canned pumpkin</strong> is a must of pumpkin granola! Make sure to use pure canned pumpkin and not pumpkin pie mix. Sometimes they are right next to each other on the shelf at the store!</p>



<p class="has-large-font-size"><strong>Pure maple syrup</strong> to sweeten things up. Maple syrup is a great all natural sweetener and it also helps add fall maple flavor. </p>



<p class="has-large-font-size"><strong>Almond butter </strong>to add flavor and texture. We will be using 1/4 cup.</p>



<p class="has-large-font-size">Lastly, any <strong>light oil </strong>of your choice. Oil helps coat and crisp up the granola while it&#8217;s baking, Use canola oil or any light oil of your choice. </p>

<h2 class="wp-block-heading">How to make</h2>



<p class="has-large-font-size">Here&#8217;s how to make pumpkin seed granola:</p>



<p class="has-large-font-size"><strong>STEP 1</strong></p>



<p class="has-large-font-size">Preheat your oven to 350 degrees and line a large baking sheet with parchment paper. </p>



<p class="has-large-font-size"><strong>STEP 2</strong></p>



<p class="has-large-font-size">Grab a large mixing bowl and add the oats, pumpkin seeds, slivered almonds, shredded coconut, raisins, cinnamon, and pumpkin pie spice. Set aside. </p>



<p class="has-large-font-size"><strong>STEP 3</strong></p>



<p class="has-large-font-size">In a small bowl, whisk together the pumpkin, maple syrup, oil, and almond butter. Whisk until combined. </p>



<p class="has-large-font-size"><strong>STEP 4</strong></p>



<p class="has-large-font-size">Now, pour this mixture over the dry granola mixture. Mix with a spoon or spatula until all the granola is covered. </p>



<p class="has-large-font-size"><strong>STEP 5</strong></p>



<p class="has-large-font-size">Pour the granola onto the prepared baking sheet and pat it down in a flat even layer using your spoon or spatula. </p>



<p class="has-large-font-size"><strong>STEP 6</strong></p>



<p class="has-large-font-size">Bake at 350 for 20 minutes. Then, turn off the oven and let the granola cool in the oven for 1-2 hours. This is key! Letting the granola sit helps make granola clusters, so don&#8217;t skip this step. Once the granola has cooled break it up into clusters and enjoy!</p>

Since this granola makes large clusters, it&#8217;s perfect for snacking. </li><li><strong>Drizzle some creamy nut butter on top.</strong> An almond butter drizzle on top of this granola is delicious!</li><li><strong>Enjoy it like cereal with some milk!</strong> </li><li><strong>Add some fresh fruit! </strong>Fruit is always a great option. You can create a delicious yogurt bowl with your favorite yogurt, pumpkin seed granola and fresh berries. </li></ul>
