<p class="wp-block-paragraph" style="font-size:16px">These vegan blueberry muffins are wholesome, soft, and moist. They are bursting with juicy blueberries and have a hint of rich chocolate flavor. </p>



<p class="wp-block-paragraph" style="font-size:16px">I don&#8217;t have many vegan muffin recipes on my blog, so I figured it was about time to start testing some! I always keep a large bag of frozen wild blueberries in my freezer, so it was a no brainer: homemade vegan blueberry muffins! </p>



<p class="wp-block-paragraph" style="font-size:16px">My favorite way to enjoy these vegan blueberry muffins is with a hot cup of coffee. They also make the perfect grab and go snack, or they can easily be packed into lunchboxes. Any which way they are enjoyed, they will be simply, delicious!</p>

It is whole grain and mild in flavor which makes it great for baking! It is also rich in vitamins, fiber, and minerals.</p>



<p class="wp-block-paragraph" style="font-size:16px">Secondly, they are made with <strong>unsweetened applesauce.</strong> Applesauce is a great substitute for oil in baking! It helps keep these muffins moist without adding the extra fats that can come from oil. </p>



<p class="wp-block-paragraph" style="font-size:16px">Thirdly, These muffins are loaded with <strong>blueberries.</strong> Blueberries contain so many vitamins and antioxidants and can provide many health benefits!</p>

<p class="wp-block-paragraph" style="font-size:16px"><strong>Preheat oven to 350 degrees</strong>. And grease your muffin tin or line it with baking cups.</p>



<p class="wp-block-paragraph" style="font-size:16px"><strong>Combine dry ingredients.</strong> In a large bowl whisk the almond milk, coconut sugar, applesauce, vanilla extract and apple cider vinegar. </p>



<p class="wp-block-paragraph" style="font-size:16px"><strong>Add in the dry ingredients.</strong> Fold in the flour, baking powder and baking soda into the wet ingredients.</p>



<p class="wp-block-paragraph" style="font-size:16px"><strong>Fold in blueberries. </strong>Carefully mix in the blueberries &#8211; don&#8217;t over mix! If you&#8217;re adding chocolate chips, mix them in now too. </p>



<p class="wp-block-paragraph" style="font-size:16px"><strong>Bake!</strong> Scoop the batter into the prepared muffin pan and bake for 18-22 minutes. </p>

<p class="wp-block-paragraph" style="font-size:16px">Yes, you can use either! However, I prefer using frozen. Simply stir 1 cup of frozen blueberries into the batter just like you would if they were fresh. </p>
