- Oat flour: I love baking with oat flour. Finely ground oat flour makes perfectly chewy and fluffy baked goods. And it only has one ingredient: ground oats! For this recipe you will need 2 1/4 cups.
- Cinnamon: What are cinnamon crumble muffins without cinnamon? Add 2 tsp of cinnamon for perfect flavor.
- Baking powder and baking soda: Both help increase the volume and create structure in these muffins.
- Eggs: For this muffin recipe you will need 2 eggs.
- Vanilla: Adding 1 tsp of vanilla to these muffins helps enhance the flavor.

How to make the cinnamon muffins with streusel
These oat flour muffins are very easy to make. They just require a few simple steps! I have outlined all the steps below.
Firstly, preheat your oven to 350 degrees. Grease your muffin tin with cooking spray or line them with baking cups.
Secondly, make your crumble topping by combining the oat flour, coconut sugar, and cinnamon in a small bowl.
Thirdly, combine all your dry ingredients in a medium bowl: oat flour, cinnamon, baking powder and baking soda. Mix and set aside.
Next, add all the wet ingredients in a large bowl: whisk together the eggs, coconut oil (or applesauce), almond milk and maple syrup until combined and smooth.
Now, pour the dry ingredients into the bowl with the wet ingredients. Fold until combined.
Finally, fill up 12 muffin tins with the batter and top each muffin with the crumble topping.
