As you may have noticed, I love making muffins. They make the perfect snack, breakfast or dessert!
These tasty vegan muffins are loaded with chocolate chips and made with ingredients you probably already have on hand!
- First, finely ground oat flour is the main flour in this recipe
- Baking powder will help puff up these muffins
- Cinnamon adds a kick of spice
- Baking soda will also help puff up these muffins
- Just a pinch of salt
- Vanilla extract will help enhance the flavor
- Maple syrup adds the perfect amount of sweetness
- Nut Butter helps add texture and flavor to these muffins
- Almond milk will add some liquid
- Applesauce or coconut oil can be used to add moistures
- Lastly, will stir in 3/4 cup of chocolate chips

How to store vegan chocolate chip muffins
Once completely cooled, you can store the muffins in an air tight container in the fridge for up to a week. You can also store them in the freezer! I prefer to store mine in the freezer and just defrost a few of them whenever we want to eat them. I store them either in a freezer zip lock bag or air tight container.

Ingredients
- 1 1/2 cups oat flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla
- 1/4 cup maple syrup
- 1/4 cup peanut butter or nut butter of choice
- 1/2 cup milk of choice
- 1/2 cup unsweetened apple sauce or melted coconut oil
- 3/4 cup chocolate chips
Instructions
- Preheat your oven to 350 degrees and grease or line 9 muffin tins. In a large bowl mix the oat flour, baking powder, cinnamon, baking soda, and salt.
- In another bowl mix the vanilla, maple syrup, peanut butter, milk and apple sauce. Mix until well combined. Pour wet mixture into the dry ingredients and stir just until combined. Then, fold in the chocolate chips.
- Scoop the batter into 9 muffin tins and bake at 350 degrees for 18-20 minutes.
