The key to these healthy, yet delicious whole wheat chocolate chip muffins are the ingredients, duh! Using enough fats and liquid like almond milk, greek yogurt, light olive oil and an egg, will make the muffins fluffy and moist. Using whole wheat flour and only 1/2 cup of sugar keeps these muffins on the healthier side.

Once the muffins have fully cooled, store them in an airtight container in the fridge for up to a week.
Additionally, they can be stored in the freezer! Store the muffins in a freezer friendly container for up to 3 months. To defrost, simply let the muffins thaw at room temperature. Or defrost them in the microwave.

These greek yogurt chocolate chip muffins are definitely versatile! So feel free to use the substitutions below.
- Substitute white sugar or brown sugar for the coconut sugar.

Whole Wheat Chocolate Chip Muffins (Healthy, Easy)
Ingredients
- 1 ½ cup white whole wheat flour
- ½ tsp baking soda
- ¼ tsp salt
- 1 egg
- ½ cup almond milk
- ½ cup plain greek yogurt
- ½ cup coconut sugar
- ⅓ cup light oil light olive oil, butter, or coconut oil melted
- 1 tsp vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees. And grease a muffin pan with cooking spray.
- In a large bowl whisk the egg, almond milk, greek yogurt, coconut sugar, oil, and vanilla. Whisk until fully combined.
- Fold in the dry flour ingredients: flour, baking soda and salt into the wet ingredients just until combined.
- Fold in the chocolate chips.
- Scoop the batter into the prepared muffin pan. (Optional, but recommended, top each muffin with extra chocolate chips.)
- Bake at 250 for 18-22 minutes. Enjoy!
