Coconut Rice Recipe (Easy and Delicious)
This coconut rice recipe is slightly savory, with a slight hint of sweetness. It only takes 3 simple ingredients, can be made in under 15 minutes, and makes the perfect side dish. If you like white sticky rice definitely give this coconut rice a try.

- 1 cup dried jasmine or basmati rice
- 1 cup canned full fat coconut milk
- 2 cups chicken broth
Over medium heat on the stove, add the coconut milk and chicken broth in a medium pot.
Bring the liquid to a boil and then add in the rice. Lower the heat to medium/low.
Bring the rice continue to a strong simmer. Continue to let the rice simmer, stirring a couple times every minute. Stir frequently as the liquid will start to absorb so you don't want the bottom to burn.
After 10 minutes you will notice that most of the liquid will be gone. Continue to stir for another minute or two or until the rice reaches the right consistency.
If the rice seems to dry add a splash more chicken broth. Continue to cook until absorbed. If the rice is still to wet, continue to simmer until all the liquid is absorbed.
*If you're reheating the coconut rice a few days later, it may become a little dry. Add a few tablespoons of water or extra coconut milk when you reheat the rice on the stove or in the microwave.
