Coconut Rice Recipe (Easy and Delicious)

This coconut rice recipe is slightly savory, with a slight hint of sweetness. It only takes 3 simple ingredients, can be made in under 15 minutes, and makes the perfect side dish. If you like white sticky rice definitely give this coconut rice a try.

Ingredients

  • 1 cup dried jasmine or basmati rice
  • 1 cup canned full fat coconut milk
  • 2 cups chicken broth

Instructions

  • Over medium heat on the stove, add the coconut milk and chicken broth in a medium pot.
  • Bring the liquid to a boil and then add in the rice. Lower the heat to medium/low.
  • Bring the rice continue to a strong simmer. Continue to let the rice simmer, stirring a couple times every minute. Stir frequently as the liquid will start to absorb so you don't want the bottom to burn.
  • After 10 minutes you will notice that most of the liquid will be gone. Continue to stir for another minute or two or until the rice reaches the right consistency.
  • If the rice seems to dry add a splash more chicken broth. Continue to cook until absorbed. If the rice is still to wet, continue to simmer until all the liquid is absorbed.

Notes

*If you're reheating the coconut rice a few days later, it may become a little dry. Add a few tablespoons of water or extra coconut milk when you reheat the rice on the stove or in the microwave.
