Stuffed Dates Recipe with Cookie Dough

This stuffed dates recipe is filled with homemade cookie dough! These stuffed dates make the best healthy snack or easy dessert. Medjool dates are naturally sweet, have a caramel-like flavor and a chewy texture. Adding cookie dough into the mix makes them 10x better!

Ingredients

  • 10 medjool dates pitted
  • ½ cup chocolate chips + 1 tsp coconut oil
  • flaked sea salt

Cookie Dough

  • ½ cup almond flour
  • 1 tbsp coconut flour
  • 1 ½ tbsp melted butter
  • 1 ½ tbsp coconut sugar
  • 1 ½ tbsp almond milk
  • ½ tsp vanilla
  • small pinch salt
  • 2-3 tbsp chocolate chips

Instructions

  • Carefully cut one side of the date to remove the pit. Don't cut it all the way through. You still want the full date to be attached! Remove the pit and repeat until you have 10 dates.
  • Secondly, make the cookie dough in a small/medium bowl. Mix all the cookie dough ingredients together until combined. Set in the fridge.
  • Now, melt chocolate. Melt the chocolate with 1 teaspoon of coconut oil in the microwave or on the stove top. Mix until melted and set aside.
  • Time to assemble! Take the pitted date and stuff it with a teaspoon or two of cookie dough. Set it down on a plate lined with parchment paper. Repeat with the 10 dates. Now, drizzle the dates with the melted chocolate and top them with flaked seat salt.
  • Set them in the fridge and enjoy! The dates are best served chilled so the chocolate has time to harden and the cookie dough has time to chill.
