Strawberry and Farro Salad

  • ½ cup cooked farro cook farro according to the package
  • ½ cup cucumber chopped
  • ½ cup grilled chicken
  • 2 fresh strawberries chopped
  • 2 tbsp crumbled feta
  • ½ avocado
  • 1 cup arugula
  • 1 tsp fresh mint chopped

Orange Citrus Vinaigrette

  • 1 tbsp olive oil
  • 1 tbsp orange juice fresh or bottled
  • ½ tsp apple cider vinegar
  • ½ tsp honey
  • tsp onion powder, garlic powder, salt AND pepper

  • This recipe makes one single serving salad but feel free to scale it up to make multiple! Make sure you have a protein source on hand like grilled chicken to add to this salad. And cook your farro according to the package ahead of time.
  • Grab a large 32 ounce mason jar or large bowl.
  • Add the farro, cucumber, grilled chicken, strawberries, feta, avocado, arugula, and mint. It's best to add it in this order so none of the ingredients get smushed.

Orange Citrus Vinaigrette

  • Add all the vinaigrette ingredients into a small container or jar. Whisk until fully combined and smooth.
  • When you're ready to eat the salad, add the dressing, mix together, and enjoy!
