Baked Banana Oatmeal (easy, canned coconut milk)

Baked banana oats are the perfect way to start your morning. They are slightly sweet, have bites of crunchiness, are are loaded with wholesome ingredients. These oats are made from a mixture of quick oats, coconut milk, banana, walnuts and chocolate.

Ingredients

  • 1 ½ cup mashed ripe banana browned bananas work best
  • 1 15 oz canned light coconut milk
  • 2 ½ cup quick oats can sub rolled oats or gluten free oats but the texture may change slightly
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ cup walnuts
  • ¼ cup shredded coconut
  • ¼ cup chocolate chips
  • ¼ cup nutella for the swirl topping, optional

Instructions

  • Preheat your oven to 350 degrees. Grease a 9x9 square baking pan.
  • In a large bowl whisk together the wet ingredients: the mashed banana and coconut milk.
  • Now add in the dry ingredients: oats, cinnamon, baking powder, and salt. Mix until combined. Now fold in the walnuts, shredded coconut and chocolate chips.
  • Pour the batter into your 9x9 prepared pan. (You can also 8x8, you will just have to adjust your baking time a little longer).
  • Using a fork or a knife, drizzle the nutella on top of the batter (optional, but recommended!)
  • Bake at 350 for 35-40 minutes. Slice and enjoy!
