Steel Cut Overnight Oats

Steel cut overnight oats are a great way to start your morning. Oats are always a great breakfast staple to turn too. When the weather starts to get warm and you don't want a hot bowl of oatmeal, make this steel cut oatmeal recipe!

Ingredients

  • 1 cup steel cut oats
  • 2 ¼ cups milk or almond milk or oat milk
  • 3 tbsp peanut butter or any creamy nut butter
  • 1 tbsp maple syrup
  • 1 tbsp vanilla extract

Instructions

  • Grab a small/medium put for the stove.
  • Add all the ingredients to the pot: oats, milk, peanut butter, maple syrup and vanilla extract.
  • Over medium heat, bring the ingredients to a strong simmer.
  • Lower the heat to a low setting and let the mixture simmer for 2 minutes. Stirring frequently until combined and smooth. Then turn off the heat. They will be liquidy and thats ok.
  • Add the steel cut oat mixture evenly between 3 mason jars or 3 containers.
  • Let them rest for 3-5 minutes while you clean up.
  • Add the lid and let the oats soak and chill in the fridge overnight.
  • Enjoy in the morning! Please note that steel cut oats are chewier in texture than rolled oats and quick oats, they actually do really well stored in the fridge for up to 5 days. Each day the oats will get softer and less chewy.
