These veggie brownies with zucchini are so fudgy, moist, and soft. They are made from almond flour and loaded with wholesome ingredients but still have a delicious brownie texture and flavor. Since they are made with almond flour they are naturally gluten free and paleo friendly.

Ingredients

  • 2 eggs
  • ½ cup almond butter
  • cup coconut sugar
  • ¼ cup pure maple syrup
  • 1 tsp vanilla
  • 1 cup shredded zucchini
  • 1 ¼ cup almond flour
  • ¼ cup cocoa powder
  • 1 ½ tsp baking powder
  • ¼ tsp salt

Instructions

  • Firstly, preheat your oven to 350 degrees. Line an 8x8 pan with parchment paper or grease it well with cooking spray.
  • In a large bowl cream together the eggs, almond butter, coconut sugar, maple syrup and vanilla using a hand mixer to ensure everything is smooth. Now fold in the shredded zucchini with a spoon.
  • Now mix in the dry ingredients: almond flour, cocoa powder, baking powder, and salt. Using a spoon or a spatula carefully mix until combined.
  • Pour the batter into the prepared 8x8 pan and bake for 25 minutes at 350 degrees.
  • Let the brownies cool a little bit before slicing. Enjoy!
