- 2 eggs
- ½ cup almond butter
- ⅓ cup coconut sugar
- ¼ cup pure maple syrup
- 1 tsp vanilla
- 1 cup shredded zucchini
- 1 ¼ cup almond flour
- ¼ cup cocoa powder
- 1 ½ tsp baking powder
- ¼ tsp salt
Firstly, preheat your oven to 350 degrees. Line an 8x8 pan with parchment paper or grease it well with cooking spray.
In a large bowl cream together the eggs, almond butter, coconut sugar, maple syrup and vanilla using a hand mixer to ensure everything is smooth. Now fold in the shredded zucchini with a spoon.
Now mix in the dry ingredients: almond flour, cocoa powder, baking powder, and salt. Using a spoon or a spatula carefully mix until combined.
Pour the batter into the prepared 8x8 pan and bake for 25 minutes at 350 degrees.
Let the brownies cool a little bit before slicing. Enjoy!
