Ingredients

  • 12 eggs
  • ½ cup cheddar cheese shredded
  • 6 slices bacon cooked
  • ¼ cup fresh chives chopped
  • ½ tsp salt AND pepper

Instructions

  • Preheat your oven to 350 degrees. And grease a muffin tin really well (the egg cups with stick if you don't grease your pan).
  • In a large bowl, crack the eggs, add the shredded cheese, bacon, chives, salt and pepper. Whisk until combined.
  • Use a 1/3 measuring cup and scoop the egg mixture evenly between 12 tins.
  • Bake for 20 minutes. Or until the center is set.
  • The muffins will puff up and then deflate. Let the muffins cool slightly before enjoying. If you are having trouble removing the egg from your pan use a spoon or a knife to prop them out. Enjoy!
