Ingredients

  • 4 slices toast whole wheat, whole grain, rye
  • 2 avocados
  • ½ cup feta crumbled
  • ½ cup grape tomatoes sliced in half
  • 4 eggs
  • salt, pepper and red pepper flakes to taste

Instructions

  • Cook the eggs. Start out by cooking the eggs as these take the longest. Grab a medium pan and coat it with oil. Put the pan over medium heat and crack 4 eggs into the pan. Cook for 2-3 minutes and then flip to cook the other side. Cook the egg to your liking.
  • Toast your bread. Add your bread to your toaster and cook until lightly browned and firm.
  • Mash the avocado. Slice the avocados in half and remove the pit. Using a large spoon, scoop out the avocado flesh, add it to a bowl or a plate and mash it with a fork. Add a pinch of salt and pepper. Now spread the avocado on top of the toast.
  • Now add the feta and tomato to the toast. Make sure to slice the grape tomatoes in half and crumble the feta (if not already crumbled or chopped).
  • Top toast with an egg! Add the fried egg on top and sprinkle with salt, pepper and red pepper flakes. Enjoy!
