- 4 slices toast whole wheat, whole grain, rye
- 2 avocados
- ½ cup feta crumbled
- ½ cup grape tomatoes sliced in half
- 4 eggs
- salt, pepper and red pepper flakes to taste
Cook the eggs. Start out by cooking the eggs as these take the longest. Grab a medium pan and coat it with oil. Put the pan over medium heat and crack 4 eggs into the pan. Cook for 2-3 minutes and then flip to cook the other side. Cook the egg to your liking.
Toast your bread. Add your bread to your toaster and cook until lightly browned and firm.
Mash the avocado. Slice the avocados in half and remove the pit. Using a large spoon, scoop out the avocado flesh, add it to a bowl or a plate and mash it with a fork. Add a pinch of salt and pepper. Now spread the avocado on top of the toast.
Now add the feta and tomato to the toast. Make sure to slice the grape tomatoes in half and crumble the feta (if not already crumbled or chopped).
Top toast with an egg! Add the fried egg on top and sprinkle with salt, pepper and red pepper flakes. Enjoy!
