Blueberry Compote Oatmeal (Easy)

Blueberry compote oatmeal makes a quick and easy wholesome breakfast. The combination of creamy oatmeal, fresh blueberry compote, plus peanut butter and toppings makes a a delicious combination that will leave you full and energized. You only need two ingredients for the oatmeal base and five ingredients for the compote.

Ingredients

Oatmeal

  • 1 whole rolled oats
  • 1 ½ cups milk

Blueberry Compote

  • 2 cups blueberries
  • cup pure maple syrup
  • 1 tbsp chia seeds
  • 1 tsp lemon juice
  • tsp salt

Toppings

  • creamy peanut butter
  • nuts: walnuts, cashews, peanuts

Instructions

  • Firstly, make the blueberry compote. Grab a large pan and add all the compote ingredients: blueberries, maple syrup, chia seeds, lemon juice and salt.
  • Let the compote simmer for twenty minutes, stirring frequently. It will thicken over the 15-20 minutes. And that's it!
  • Meanwhile, after about ten minutes of cooking the compote, make the oatmeal base. Grab a small saucepan and add the oats and milk.
  • Mix the oatmeal ingredients together with a spatula over medium-low heat for 4-5 minutes. Stir consistently. Pour the oatmeal evenly into 2 or 3 bowls and add a spoonful of blueberry compote on top.
  • Now ENJOY! Top with other fresh berries, almonds, walnuts, cashews and peanut butter.
