Roasted Tomato Soup with Grilled Cheese

This roasted tomato soup with a homemade grilled cheese is going to become your new favorite soup recipe. All you need to do is bake the tomatoes, onions, and garlic, and then immersion blend them with the remaining ingredients, it's that easy!

Ingredients

  • 12 roma tomatoes halved
  • 4 cloves garlic
  • 1 medium yellow onion quartered
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 28 oz can crushed tomatoes
  • ½ cup fresh chopped basil
  • 1 tsp EACH: thyme, salt, pepper or salt and pepper to taste
  • 1 tsp honey
  • 1 ½ cups chicken broth
  • ½ cup half and half

Instructions

  • Preheat your oven to 400 degrees and grab a large baking pan and line it with parchment paper or foil.
  • Add the halved tomatoes, garlic, and yellow onion to the pan. Drizzle them with olive oil and add the cubes of butter. Bake in the oven for thirty minutes.
  • Now, add the roasted tomato mixture to a large soup pot with the the crushed tomatoes, fresh basil, seasonings, honey, chicken broth. Put the pot on the stove over medium low heat.
  • While the soup is starting to heat up, use an immersion and blend until smooth. Or blend until the soup reaches the consistency of your liking.
  • Lastly, stir in the half and half and bring the soup to a strong simmer. Serve with a homemade grilled cheese and enjoy!
