- 1 cup flour
- 1 cup corn meal
- 1 tsp baking soda
- ¼ tsp salt
- 2 eggs
- 1 cup plain greek yogurt
- ½ cup milk
- ⅓ cup honey
- ½ cup canned corn drained and rinsed
Preheat the oven to 350 degrees and grease a muffin pan with cooking spray.
Combine dry ingredients. In a medium bowl combine all the dry ingredients: flour, corn meal, baking soda and salt. Mix and set aside.
Whisk together wet ingredients. In a large bowl whisk together eggs, greek yogurt, milk and honey. Whisk until combined and smooth.
It's time to combine everything together! Add the dry ingredients into the bowl with the wet ingredients. Mix with a spoon or spatula until combined. Now mix in the corn.
Bake! Add the muffin batter evenly between the twelve muffin tins and bake for 16-18 minutes. Let the muffins cool slightly and then enjoy!
