Cozy Potato and Sausage Soup

Potato and sausage soup is made on the stove with a mixture of ground sausage, beans, veggies, and potatoes. This recipe is quick to make and packed with flavor.

Ingredients

Ground Sausage

  • 1 tbsp avocado oil separated
  • 1 pound ground sausage
  • 1 tsp EACH: dried sage, fennel seed, dried thyme, garlic powder, and Italian seasoning

Remaining Soup Ingredients

  • 1 tbsp avocado oil
  • 1 large yellow onion diced
  • 3 cloves garlic
  • 2 15 oz cans cannellini beans drained and rinsed
  • 6 cups chicken broth separated
  • 1.5 pound bag of baby gold potatoes chopped into bite size pieces
  • 3 handfuls of baby kale
  • salt and pepper to taste

Instructions

  • Start off by browning the sausage in one tablespoon of oil. Add in one teaspoon of each seasoning: sage, fennel, thyme, garlic powder, Italian seasoning. Cook until browned and cooked through. Remove the cooked sausage from the pot and strain it in a colander to remove any excess oil fat. Set aside.
  • Add a tablespoon of oil to the same pot and add the chopped onion and garlic. Sauté for five minutes.
  • Now add in the drained and rinsed beans and one cup of broth. Using an immersion blender, blend everything together until smooth and creamy. You can also carefully add the ingredients to a blender and blend until smooth.
  • Now add in the remaining chicken broth into the blended mixture along with the chopped potatoes and cooked sausage. Stir to combine.
  • Bring the soup to a boil, add a lid to your pot and reduce the heat so the soup stays at a simmer. Simmer for 25 minutes, stirring occasionally. Using a fork, poke a couple of potatoes to make sure they are cooked to your liking. You want the potatoes to be fork tender!
  • Now stir in 3 handfuls of chopped kale. Mix to combine and let the kale wilt into the soup. About 1-2 minutes.
  • Add the soup to serving bowls and enjoy!
