Healthier Cinnamon Roll Oatmeal Bake (Easy)

This cinnamon roll oatmeal bake is is a warm breakfast casserole made with oats, milk, eggs, and cinnamon, of course! It's also topped with an optional homemade cinnamon icing.

Ingredients

Dry Ingredients

  • 3 cups rolled oats
  • 1 tbsp cinnamon
  • 2 tsp baking powder

Wet Ingredients

  • 1 ¼ cup milk
  • ¼ tbsp heavy cream OR half and half
  • cup creamy almond butter
  • ¼ cup coconut sugar
  • 2 eggs
  • 1 tsp vanilla extract

Icing (optional)

  • ¼ cup powdered sugar
  • 1-2 tsp milk
  • ¼ tsp cinnamon

Instructions

  • Preheat your oven to 350 degrees and grease an 8x8 or 9x9 pan and line it with parchment paper.
  • Combine the dry ingredients. In a large bowl, add the oats, cinnamon and baking powder. Mix and set aside.
  • Combine the wet ingredients. In a medium bowl, whisk together the milk, half and half, almond butter, coconut sugar, eggs, and vanilla extract.
  • Combine the wet and dry ingredients. Add the wet whisked ingredients into the bowl with the dry ingredients. Mix to combine and pour the mixture into your prepared pan.
  • Bake! Bake the oatmeal for 30-35 minutes (timing will depend on what size pan you use).
  • Make the frosting. While the oatmeal bakes, prepare the frosting in a small bowl by combining all the ingredients together.
  • Enjoy! Remove the baked oats from the oven, top with icing, and enjoy!
