Healthier Cinnamon Roll Oatmeal Bake (Easy)
This cinnamon roll oatmeal bake is is a warm breakfast casserole made with oats, milk, eggs, and cinnamon, of course! It's also topped with an optional homemade cinnamon icing.

Dry Ingredients
- 3 cups rolled oats
- 1 tbsp cinnamon
- 2 tsp baking powder
Wet Ingredients
- 1 ¼ cup milk
- ¼ tbsp heavy cream OR half and half
- ⅓ cup creamy almond butter
- ¼ cup coconut sugar
- 2 eggs
- 1 tsp vanilla extract
Icing (optional)
- ¼ cup powdered sugar
- 1-2 tsp milk
- ¼ tsp cinnamon
Preheat your oven to 350 degrees and grease an 8x8 or 9x9 pan and line it with parchment paper.
Combine the dry ingredients. In a large bowl, add the oats, cinnamon and baking powder. Mix and set aside.
Combine the wet ingredients. In a medium bowl, whisk together the milk, half and half, almond butter, coconut sugar, eggs, and vanilla extract.
Combine the wet and dry ingredients. Add the wet whisked ingredients into the bowl with the dry ingredients. Mix to combine and pour the mixture into your prepared pan.
Bake! Bake the oatmeal for 30-35 minutes (timing will depend on what size pan you use).
Make the frosting. While the oatmeal bakes, prepare the frosting in a small bowl by combining all the ingredients together.
Enjoy! Remove the baked oats from the oven, top with icing, and enjoy!
