Healthier Chocolate Crinkle Cookies

- 1 ½ cup almond flour finely ground
- ¼ cup cocoa powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 egg
- ½ cup coconut sugar
- ½ cup butter OR coconut oil melted and cooled
- 1 tsp vanilla
- powdered sugar for rolling about 1/4 cup (optional)
Preheat your oven to 350 degrees and line two baking sheets with parchment paper.
In a large bowl, whisk the egg, coconut sugar, coconut oil and vanilla. Whisk until combined.
Now add in the almond flour, cocoa powder, baking soda and salt. Mix until combined.
Using a cookie scoop or a spoon, scoop the dough into 18 balls onto your baking sheet. Let the cookies set on the cookie sheet for a minute or two.
Now, put the powdered sugar in a small bowl and one by one place each ball in the bowl and cover it with powdered sugar.
Bake cookies 350 11-13 minutes.
Let the cookies cool for 5 minutes before removing them from the cookie sheet. Enjoy!
