Paleo Chocolate Chip Cookies (Gluten Free)
These paleo chocolate chip cookies are perfectly chewy, chocolatey, and moist. They are made from a mixture of almond flour and coconut flour making them gluten free and paleo friendly.

- 1 ½ cup almond flour
- ⅓ cup coconut flour
- ¼ tsp baking soda
- ¼ tsp salt
- 2 eggs
- ½ cup coconut oil or butter, melted
- ½ cup coconut sugar
- 1 tsp vanilla
- ½ cup chocolate chips
Preheat your oven to 350 degrees. Grease two cookie sheets with cooking spray or line them with parchment paper.
First, combine the almond flour, coconut flour, baking soda and salt in a medium bowl. Set aside.
In a large bowl, whisk the eggs. Then add in the melted coconut oil, coconut sugar and vanilla. Whisk until fully combined.
Fold the dry ingredients into the wet mixture just until combined.
Gently fold in the chocolate chips.
Using a cookie scoop, scoop 22 cookies onto the baking sheets. Lightly press down on the top of each cookie to flatten them slightly. This will help them spread and bake nicely.
Place cookies in the oven and bake for 13-15 minutes. Let the cookies cool slightly before enjoying!
