Paleo Chocolate Chip Cookies (Gluten Free)

These paleo chocolate chip cookies are perfectly chewy, chocolatey, and moist. They are made from a mixture of almond flour and coconut flour making them gluten free and paleo friendly.

Ingredients

  • 1 ½ cup almond flour
  • cup coconut flour
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • ½ cup coconut oil or butter, melted
  • ½ cup coconut sugar
  • 1 tsp vanilla
  • ½ cup chocolate chips

Instructions

  • Preheat your oven to 350 degrees. Grease two cookie sheets with cooking spray or line them with parchment paper.
  • First, combine the almond flour, coconut flour, baking soda and salt in a medium bowl. Set aside.
  • In a large bowl, whisk the eggs. Then add in the melted coconut oil, coconut sugar and vanilla. Whisk until fully combined.
  • Fold the dry ingredients into the wet mixture just until combined.
  • Gently fold in the chocolate chips.
  • Using a cookie scoop, scoop 22 cookies onto the baking sheets. Lightly press down on the top of each cookie to flatten them slightly. This will help them spread and bake nicely.
  • Place cookies in the oven and bake for 13-15 minutes. Let the cookies cool slightly before enjoying!
