Almond Flour Chocolate Cake (Gluten Free)

Almond flour chocolate cake is topped with chocolate frosting giving it 2x the chocolate flavor. This cake is made with almond flour making it paleo, gluten free, dairy free and low carb.

Equipment

Ingredients

  • 3 cups almond flour
  • ½ cup cocoa powder
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 4 eggs room temperature (you can soak the eggs in a bowl of warm water while you gather your other ingredients)
  • 1 cup coconut sugar or granulated white sugar
  • ½ cup butter melted
  • 1 tbsp vanilla extract

Chocolate icing

  • 1 cup butter softened to room temperature
  • 2 cups powdered sugar
  • ¾ cup cocoa powder
  • ¼ cup milk
  • ¼ tsp salt

Instructions

Chocolate Cake Batter

  • Preheat your oven to 350 degrees. Grease two 6 inch cake pans and line the bottoms with parchment paper.
  • In a medium bowl, add the almond flour, cocoa powder, baking powder, baking soda and salt. Mix until combined and set aside.
  • In a large bowl, whisk the eggs, sugar, butter and vanilla. Whisk until fully combined and smooth.
  • Now, pour the dry flour mixture into the wet ingredients and fold just until combined.
  • Distribute the batter evenly between the two pans and bake for 30-35 minutes.
  • Let the cakes cool for about 15 minutes before removing them from the pan. Let the cakes cool completely.

Chocolate Icing

  • To make the icing, we will be adding the powdered sugar and cocoa powder in batches.
  • Using a hand mixer, cream the softened butter in a large bowl. Add 1 cup powdered sugar and ½ cup cocoa powder and blend until combined.
  • Add the milk and the remaining 1 cup of powdered sugar. Blend until smooth.
  • Add the vanilla extract and remaining ¼ cup of cocoa powder. Blend until smooth.
  • Add the icing to the top of the first cake round and then stack the other cake on top. Using an icing spatula or tool of choice, ice the cake fully. Slice and enjoy!
