Ingredients

  • 1 1/2 cups oat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1/4 cup maple syrup
  • 1/4 cup peanut butter or nut butter of choice
  • 1/2 cup milk of choice
  • 1/2 cup unsweetened apple sauce or melted coconut oil
  • 3/4 cup chocolate chips

Instructions

  • Preheat your oven to 350 degrees and grease or line 9 muffin tins. In a large bowl mix the oat flour, baking powder, cinnamon, baking soda, and salt.
  • In another bowl mix the vanilla, maple syrup, peanut butter, milk and apple sauce. Mix until well combined. Pour wet mixture into the dry ingredients and stir just until combined. Then, fold in the chocolate chips.
  • Scoop the batter into 9 muffin tins and bake at 350 degrees for 18-20 minutes.
